81A & 81B's Buckley Schnitzel Schzammmmmm

Red Cabbage:
red cabbage, onion, apples, cloves, allspice, bayleaf, apple vinegar, butter, sugar, Yellow 7, and carribbean red

Red cabbage, onion, apples and peppers in a Dutch oven with butter, vinegar, sugar, water bring to boil. Add cloves, bay leaf, allspice in cheese cloth. Let simmer for 1.5 hours then add baking soda and water mix (about 3oz each) until thicker.

Spatzle
flour, salt, egg, Beer

Mix flour, salt, egg and beer until bubbley and elastic. Place on wet cutting board and scrap dmall amounts into boiling salt watet. Cook uncovered in salted boiling water about 8 minutes. Drain.

Kases Patzle
emmentaler cheese (grated), pepper, german bread crumbs, onion finely chopped, Yellow and red fatalii

Preheat oven 350. Heat vegtable oil, cook onions, peppers till light brown. Grease casserole dish. Layer bread crumbs, spatzle, cheese, repeat. Place in oven till cheese is light golden brown.

Pork cutlets and breading
flour, egg, german bread crumbs, seasoning salt with fresh ground naga morich powder

Place bread crumbs and seasoning salt in bowl. In another bowl flour and seasoning. And another bowl beaten egg and seasoning. With tenderizer mallet flatten pork cutlet. Season cutlets then Dredge cutlet in flour then egg and generous amount of crumbs. Heat oil. Cook until golden.

The Sauce
mushrooms, bacon, onions, cream, broth, parsley, more Beer (duh) Douglah, and an organge pepper with fruity flavor given to me by Chileaddict (no real heat just flavor)
In case your wondering about the choice of Douglah, the beer is sweet.

After cutlet is cooked remove and add mushrooms cook 2 minutes then add butter, Bacon, onions, peppers. When onions brown add broth, cream, beer. Add seasonings. Simmer to reduce about 15-20 minutes. Add small amount of parsley. Pour sauce over cutlet. Enjoy!!!

Like I said earlier I took a few liberties with recipes but I hope I kept things close enough
In the rules THP said you could add your own twist - it's all cool! Besides, German food is kind of known for NOT being spicy, so I think we're ALL taking liberties here!

OctoberFest has never looked soooooo good! The pictures that have been posted look amazing!!!! I've found a whole new reason to fall in love with Fall........ooops, a timer just went off, and I have no idea what it's for....;)
 
As you can see, it's laden with Congo Trinidad peppers. A close relative of the scotch bonnet, but a bit bigger and a little sweeter (the red stuff). Fresh from the garden.

We are enjoying a late tropical disturbance today, so the banana leaf (lobster-claw) is glistening from nonstop tropical rain. I picked it mere seconds before I snapped the pic.

The food was fantastic!!! I drank so much busch light as my beloved Gators lost. Don't even care about the game anymore.

Perfect!!!!..

Reading is so hard when you're feelin' the flow... you know!!!! I have a list next to the computer with each & every rule I read.....so I'm "trying"! Now, if I can get the food tasty-right, and cooked-right, and posted-right...and Aquarius aligns with Mars and I find my POL...well by gosh, then I'll be throwin' an entry into this mix tomorrow!!!! Unless Scovie scarfs it down first....but I have it booby-trapped, and he doesn't know it! heh, heh, heh Either way - you'll see pics!!!! ;)

What's 81 missing? It would be definitely be more helpful if you just came out and told him what he is missing, rather than all this beating around the bush bulls...t.
