They've been coming down to rest temp for the past hour ...

It's time.
 
Very tasty ... dramatic in presentation, but not really better than brisket in any significant way ...
 
I'm happy to have cooked some, and they are improved for having seen a bunch of smoke compared to the oven set, but top notch brisket is 1/2 the price of these at normal price, you lose less weight (bones vs not) ...
 
Now I know I'm not missing out on something particularly special when I'm having my favorite - prime/black brisket ;)

Not that I can detect in particular, no ...
 
They aren't dried out, though - including the bark - and I have a feeling that would not be the case without the 3x beers ...
 
Was 9-10 hrs on smoke, and like 12-13 hrs in the low-oven ...

 
 
What do you do with them on that metal mesh? I see mesh marks so you flipped them.
