smoking Smoked trout

We are back and we smoked up a fish...

Oak and peach wood...

never tried peach wood before! if you have never tried smoke lamb, give it a try, it takes on a whole new meaning of "good eats"!

one year i smoked: beef roast, whole chicken, trout, salmon and lamb roast all at the same time and the lamb won hands down. it wasn't the best cut but then again when it comes to smoking, you can take blade steak/roast and make it so tender soft.

way to go on the smoke trout!
 
the trout looks good, but you cant beat the taste of smoked salmon.. your trout would come in a close second...hehehe

Of course i'm biased because i lived in the Seattle area for a few years and smoked 100-200 each year.
 
Other than the obvious case of ringworm on the fish I'd mao it.

Was it smoked straight no chaser or did you rub or brine it first?
