breeding rocoto cross section

For this evenings dinner I thinly sliced a red rocoto.
When put on my plate I noticed the peculiar inner rim.

Has anyone else noticed this?

Yeah I've seen this before....It's a common thing. This is what makes the rocoto very juicy inside as these "bubbles" hold liquid....
 
Great pic, I've cut open a ton of them before and never noticed that. I have to start paying attention!
