recipe-help Guacamole recipe wanted!

* 3 avocados, Peeled, halved, and seeded
* 1 lime,juiced
* 1/2 teaspoon kosher salt
* 1/2 teaspoon ground cumin
* 1/2 cayenne pepper, diced (very finely)
* 1/2 medium onion, diced
* 2 Roma tomatoes, seeded and diced
* 1 tablespoon chopped cilantro
* 1 clove garlic, minced

Toss the avocados in the lime juice, to help preserve the color, Drain the juice off the avocados. RESERVE 1 TBSP Lime juice for later use.

Add the salt and cumin to the avocados and mash. (I use a Potato Masher)

Fold in the Peppers, onions, tomatoes, cilantro, and garlic. Add Lime Juice.
Leave to set a room temp for about a hour.
 
you can substitute and peppers you wan...but as always think of your guests..

I would recommend on batch of calm..and one crazy...ya know?
 
if you have a hard time finding some nice fresh ones...you could always buy some .......eeekk...frozen, peeled and halved...

of course only as a last resort

Mayonnaise. Makes it nice and creamy..but yeah, kinda white trash...but hey, if the shoe fits......

Funny, i recently heard that a well known local chef here who uses miracle whip in his guacamole......and his stuff is phenomenal too.
 
no garlic? My basic recipe is avocados, lime juice, garlic and salt. cilantro if you can get it, and green onions and tomatoes if you have them, pepper powder or hot sauce to your taste or the taste of your guests.

But you have to have garlic!
 
avocados
freshly squeezed lime
sea salt
minced garlic
cumin
roma tomatoes (diced)
freshly diced hot peppers of choice
diced vidalia onion
cilantro (take it or leave it)
sour cream
Spike's seasoning (sometimes I use it, other times I do not)

I'm not listing amounts here as I am the type that makes foods to taste and only use reicpies as a guide not a rule. I peel and mash the avacadoes with a fork into a large glass bowl. Dice all the peppers (usually more than one type to get a full spectrum of heat). Dice vidalia onions , garlic, Romas and cilantro. Mix all these together with the avacadoes, sour cream, salt and then add lime juice. Slowly add in cumin ( just a touch for flavor) and Spike's if you choose to add it. I also leave one or two of the avacado pits in the mix as it seems to slow the "browning" that occurs if you don't eat it all and put it into the refridgerator.

Hard to believe, but I've found that it really does help keep it from browning up.

one more last detail. Make sure to buy a good avacado.
If its soft to the touch avoid that buggar.
you dont want a hard avacado.
they should be soft, but not mushy... especialy for guacamole.



there are a whole lot of guacamole recipes out there, and most of them are at least a little differnt.
heres a basic recipe for "authentic guacamole".
just avacados, chillis, and salt.
I would start with that and add w.e you feel adds to the flavor, if you need ideas look at other recipes :)
