From the heart of a Potato.

Seriously. I'm making Corned Beed & Cabbage with Potatoes today. I start peeling some potatoes and find this in one:

I have no idea how to preserve a potato like that.
It's currently in a plastic bag in the fridge. I tried to squeeze all the air out of the bag. So far, not too bad, but won't last.
 
freeze it in vacuum sealed stuff?
If ya dont hava sealer, just use a straw to suck all the air out, and close tight.

I have huckleberries tht are like 3 yrs old in the freezer and still fine that way.
A dip in some lemon juice will keepit from oxidizing (darkening) too.
