food-safety What is this? Yeast, slime, mold?

Hi, I have made a hot sauce without any fermenting process. Used the classic ingredients, salt 3% by weight and didn't use water as a liquid source, just white vinegar and cooked everything. I did sanitized the bottles. They got bottled 1 and half month ago.

This slimy clumps appeared some days ago, it isn't at the top of the sauce. The smell is good and taste too. What could this be?
