dehydrators Dehydrator & Pressure Canner

I bought some new things and I have some questions

I bought a stockli dehydrator. I have this one

What temperature should I use to dry peppers? I have it at 40-45 Celsius now (104-113 Fahrenheit). Is this ok?

I also bought a Pressure Canner. I checked several sites and with my budget I decided to buy this one

I never owned a pressure canner before so all info is welcome. Tips and tricks, what jars should I use, etc

1....dehydrator temperature is about right...I run mine at 125F (close to 55C)...

2....I have the exact same pressure cooker...just follow the directions and you will be fine...as far as jars go...you want a good quality jar (I use Ball/Kerr jars)...

3...the magic bullet IMO is a fine piece of machinery...I use it to grind all my peppers into puree when I can them...
 
My pressure canner may well be the best pot in the cabinet. I can hardly wait until I can start using it to can potatoes; I just don't want summer to end too soon. I figure another week, maybe two until the plants are completely dead and I can start digging. I doubt it will happen, but I would LOVE to can 100 quarts of Yukon Gold spuds, though I will need to add some Kennebecks to get to that total. I only planted 100 Yukon seed potatoes and I doubt each plant will provide a quart of taters.

IMO, even the canned potatoes are better than what I get from the store unless I want baked ones.

Ball/Kerr jars are not available in europe (at least to my knowledge) so I hope someone here can give me some alternatives.
