ChileHead Powder

(this I'd first posted in a private group, but thought I'd share)

I just made a chile powder creation out of:

• Chipotle (chile meco type)
• Bih Jolikia
• Red Savina
• Japanese Birdeseye
• Sea Salt
• Garlic/Onion Powder
• Cumin

And a pinch of fresh-ground white pepper. :)

Here's a pic of some of the ground chilies before adding the other spices.

It's spiffy as hell...except when I was washing out the coffee grinder and spaced wearing gloves...:fireball:

I had a 1/2 healed cut on one finger, and a hangnail on another finger that's REALLY mad at me now...owowowow...lol

I was going for a good range of burn..methinks I got it.
The birdseye and savina have a nice 1-2 warmup, then the Bih suckerpunches ya.

Needs more Naga tho next time. >;-)

QS...is the Japanese Birds like a tepin or pequin as far as burn?...immediate, harsh, up front, but goes away fairly quickly?

Pretty much, yes.

I tend to use them as filler since they are so cheap to buy, but still have some heat..mostly upfront like you said. Not very tasty really by themselves but in this case it doesn't matter.

I used the ones on the left in this pic, the others are from Thailand.

Tony Legner has a really good hot powder called Cat-5 Food Polish. I use it on practically everything.
Yeah, it's a good replacement for the salt shaker, as it has quite a bit.
