    I have all three of them and they are all labeled Chile Habanero. In tasting them I feel that the green is the hotter. But non the less they are all pretty good.

    El Yucateco has three different sauces. If you were to use the scale for comparison, the red is an 8, the green is a 9 and the brown or xxx is a 10. I hear it is one of the most used sauces in Mexico.

    It mixes very well. As for an amount...experiment. If your sauce is thick you can get bigger needles. I also keep some of the sauce I want in a jar as opposed to a bottle, it's easier to fill the needle. One thing you might want to watch, you know how popcorn in the nuker will burn if done too...

    pickled Pickle Juice

    Do you have a good recipe for pickling without a real strong vinegar taste? I would prefer the pickle taste to strong vinegar. But if I CAN get a reasonably mild taste it would be great. Any help is appreciated.
