    Thanks for the replies! I made some test and as long as the bottle is filled at the right temperature and flip when hot, it make no difference if it cooled upside down or upright.   I also get the empty bottles I get come upside down in the box and think its good because it help not getting dust...

    Hi, like most of you I hot fill and flip the bottles upside down to sterilize the lids and I put the bottles upside down in the boxe. What I wounder is when cooling down is it best to let them upside down or is better to flip them upright or it make no difference?

    Hi, I think that chipotle are normally made from red jalapenos but green are alot easier to find these time. Did the taste of chipotle made from green or red are lot different? Maybe Im wrong but to me its more about the smokey flavor than the pepper and they will both turn brown.

    Thanks oldsalty, I will do a ph test but Im pretty sure it will be between 3 and 3.5. I have an hot sauce company. Its sometime hard to find pepper there in the north (Québec, Canada) so I have to froze them but I think it will be more convenient to make mash.

    Hi, I have 100kg of frozen habanero and decide to make mash from them to be able to keep them at room temperature. For 8kg of pepper I put 3 litter vinegar and 1kg iodized salt. I don't want it to ferment, I want it to be stable. do you think I used enough salt and vinegar?
