    For saving, I usually just dry 4-5 peppers worth on a paper plate.

    I'm bringing my plants in when it gets below 50F; I'm not worried about the amount of light because I'll just take them out on sunny days. Another optiopn is to just cover them on cold nights, it probably won't get cold enough long enough to totally kill them.
