Duff's Wingfest 2010 with Defcon Wings

Last weekend's Hellicious adventure was at Duff's in Brooklyn, one of my local watering holes. My second Defcon event at Duff's, the last one being in 2008 at the old Duff's location.

The Creator (as we call him) and his wife set up shop out front of the fitting metal/biker bar with 160 lbs. of pre-fried wings in Rubbermaid crates. On a table were three catering pans with sternos to heat the wings in the sauce. Defcon Condition 1, 2, and 3 respectively.
Many a drunk stepped up to the table and asked for #1, as previous victims became giggling spectators.
DC 1 is right on the money for me. There really is such a thing as building tolerance because I don't find the #1 too hot. Just right, I would call it. Indisputably (says I and many on this forum) one of the best wing sauces on the market, if not the best. The right heat, the right flavor, the right tang, and the ability to just add it to the chicken without cooking it with butter, etc. The perfect wing sauce.
Needless to say I enjoyed my wings. One of my bandmates started with #2, and moved up to #1 as if were no big deal. He quickly went back to #2, handing me his wings. This seems to be a pattern with the non-chiliheads.
After a few servings of wings I was ready to step it up. That's the best thing about Creator, he's always got something hotter! He made his way to the Defcon-mobile and returned with a bottle of DM-MKIII (Deathmatch Mark 3), his newest product. DM MKIII is nothing like the DCs, nor is it like its predecessor, MKII. It is a soy-sauce based wing sauce with habaneros, naga, pepper extract, wasabi (horseradish in this case, like the stuff at Japanese restaurants) and ginger.
I tried it on a straw and couldn't really tell much about it, so I removed the reducer (Reducer? For amateurs! LOL) and made my own MKIII wings. Now these had a nice bite. Not as smooth as DC sauces though. I see this more as a way to kick up DC 1 if you don't mind a few seeds and bits.

Creator was nice enough to give me a bottle, so I spoon tasted it after. It's reddish brown in color and smells like pepper extract. Scary. Most extract sauces are hard to review for taste because it's literally a race against the clock. You have to judge the flavor before the heat takes over, which only takes a few seconds.
With MKIII, you get an immediate hit of extract and extreme heat. The heat rises for a few seconds and any unpleasant extractiness disappears. The prominent flavor is habanero with a hint of naga flavor and soy sauce. The heat holds steady for another few seconds then drops leaving you with a pretty clean finish for an extract sauce. You'll always notice more extract in the aroma, and when spoon tasting. On food or as an additive it will always be a little more pleasant, which is why I enjoyed it more on the wings.

Defcon Sauces has also released Zero Sludge, which is a follow-up to Zero. Hotter than zero with 15 pounds of habanero instead of 10 in a tiny round container. Look at Creator's evil grin as I get served.

Sludge was the first real pain of the evening. Enjoyable, of course. And the burn is nice and slow, like molasses. It really creeps so you get to enjoy all the stages, and it leaves you guessing as to just how hot it will get. It has a great concentrated habanero flavor, and that climbing burn is just wicked. Something you need to experience, and something that makes these events "events". Again, my tolerance seems to be higher, so this didn't send me down the street clutching my abdomen like the others. Just a tear. Tears of joy! Not so much for the others. And The Creator has so much fun watching the victims stumble off in pain. Some become delirious mumbling to themselves while pacing aimlessly. Good times I say. Why not enjoy?

Overall this was a great night. charlesNYC (above) made it out, this being his first real encounter with THP members. There were also friends of mine, and friend's of Creator, beer, more beer, oh, and did I say beer?
The Creator is passionate not only about his creations, but also about the good times he creates. I've been to Duff's but you can't really compare a regular night at Duff's to this. He makes sure you have fun, and tries his best to make you suffer. What a great host.
I suggest all chiliheads keep an eye on the Event section here on THP for events like this and others. This really is a community, and not just an online one.
