In my house, we have a new tradition that my kids love.....breakfast for dinner. As the title implies, they can have whatever breakfast foods they want....for dinner.

Anyway, I've been on an omelet kick the last few weeks, and wanted to share this with y'all (even though I'd bet more than half of you have already tried it  ).

In my omelet (sp?) I put 3 eggs, a bit of milk, cheddar and mozzarella cheeses, onions, chopped ham, I jalapeno, and one habanero, both finely diced. For those who have had a habanero omelet, you know what I mean. For those who haven't, try it. It's heaven.

I usually go for the patties. Links get a little difficult to keep in the biscuit. As a fellow Southerner, I too appreciate biscuits and gravy. Truly a Southern delicacy....although bad for the waistline...

Breakfast is also good at 3 or 4 am when you're drunk!

There's something about greasy food that seems to help hangovers....i think it coats the stomach. One of my favorites is a plate of greasy enchiladas with a couple fried eggs on top.
