Dave’s “South West style” Meaty Chili

1 ½ - 2 - Lbs. Chuck Steak (trimmed & cut into cubes)
2 – 16 oz. cans of stewed tomatoes
5 oz. – tomato paste
1 – lg. ripe tomato (chopped)
4 - Cloves fresh garlic (minced)
1 – med. white onion (chopped)
1 – Can/bottle of beer (lager or pilsner)* darker beers tend to get bitter, when used for cooking. Enjoy drinking the rest of the pack - while preparing. ( It makes cooking, all the more fun)
2 – TBS. Worcestershire sauce
2 – TBS. soy sauce or ½ tsp. - liquid smoke for flavoring
1 – TBS. Salt
1 – TBS. black pepper
1 – TBS ground paprika
1 – TBS fresh or ground: parsley or cilantro
1 – Fresh lime (juiced) or 1 – TBS. bottled lime juice
2 – TBS. ground cumin
3 - TBS. chili powder
1 – lg. Jalapeno, Chile, Habanera, etc … hot pepper (minced)
2 – med. cabana, bell etc … mild peppers (chopped)
* (I like a mix of mild & hot fresh peppers, in this recipe)

*** Optional – hot sauce or habanera hot peppers (to taste) *** & upgrade to - Dave’s “s/w style” Firehouse Meaty Chili

• Grilled the beef on high flame, just sear for about, 7 - 10 mins. & set aside. In a lg. sized Dutch oven w/ lid (275 degree F) oven or a crock pot, (low setting). Add all the above ingredients. & mix well. Slow cook for 3+ hrs. You can also use a pressure cooker & cut the time to 1 hr. (low heat) (obviously, no need for mixin’ while cooking) Otherwise, mix occasionally, during cooking, to separate the meat & serve hot in a low, wide bowl.

* Makes: 6 – 8 honest sized servings * - Yahoo ! … & Enjoy !

Chili cookoff fans might argue about meat or not, but even if they do explode in my mouth, beans are a must!

So is chocolate.
