This ain't a recipe by any means, but...

Whole Foods has some 5yr aged Gouda, and I've been eating it on crackers with orange habs, and sipping a Belgian Triple (Maredsous). You guys gotta try this. I'm half in the bag from the 10.5%, but I still can't stop snacking!!!
