I have never smoked anything before, well not in a smoker anyway and I want to build a brick smoker in my backyard. Does anyone know where I might be able to find some plans for one and if anyone has pics of one I would love to see them so i can get some ideas. Thanks

A good book to get is "Meat smoking and smokehouse design". It's got lots of basic info and lots of different ideas for making smokers, some from brick. I'm planning on building one this summer from cinder blocks but haven't figured it all out yet.

Maybe you should try it first before building something permanent my .02

I would incorporate a way to do a brick oven, as well as direct heat grilling, smoking, and cold smoking.
Consider ease of cleaning and water shedding.
And I am so jealous of you you evil bastard.;)

I'm thinking of adding a small brick oven to mine. Then I can bake buns and smoke sausage at the same time.

Brick oven is for pizzas too! Also good for drying things with a hint of smoke.

Fatalii's design is interesting but you need wood for fuel and woodchips for smoke. I'd rather use my fuelwood for my smoke, unless I add the brick oven then I can add woodchips to make smokey pizza.
