I will do my best to update this as info becomes available. Obviously mods are welcome to modify this first post. I wanted people to be able to access a list of peppers in descending heat by lab tested scoville units. Anyone feel free to post and I will update it as I can. I AM NO EXPERT. feel free to comment, especially OMRI.
BHUT JOLOKIA - 1,001,304
NAGA - Dorset, morich, etc. 960,000
7POT -
TRINIDAD SCORPION -
FATALI
DEVILS TONGUE
CHOCOLATE HAB - 301,065
ORANGE HAB - 295,529
RED SAVINA HAB - 256,341
POTAWIE

Red savina is really no hotter than a normal hab but Fatalii and devil's tongue should be up there on the list probably just below the naga, bhut, 7-pot and scorpions.

from NMSU
"Bhut Jolokia, at 1,001,304 Scoville Heat Units (SHU), is nearly twice as hot as Red Savina"
First of all... Bhut Jolokia with the fiery 1,001,304SHU world record!
http://img186.imageshack.us/img186/9801/boslandpaulpq6.jpg
Red Savina with 577,000SHU (even though the result never duplicated).

EDIT:
Some more authenticated scores.

The red savina testing was very likely flawed so its best to just forget the 577,000 SHU. Chocolate habs, white habs, gold and white bullet habs are all much hotter as well as the ones from the 2001 heat levels link.

Paul Bosland has had seed samples of all the super hots for a while now. I was looking forward to NMSU's testing results under a controlled environment of all these. Ironically, all plants but Bhut Jolokia are destroyed each time due to "virus" issues. Strange this happened 2-3 times now from my understanding.
I'm starting to wonder how the seeds were so compromised.

I wonder the same cmpman. They'll likely only show SHU results when they have enough seeds to sell.

Chocolate habs have been tested as high as 450000 SHU according to
http://www.thechileman.org/results.php?find=habanero+chocolate&heat=Any&origin=Any&genus=Any&chile=1
They also say Naga Morich is 1,500,000SHU and Red Savina is 577,000SHU.
It's better to show the tests, not places with no known sources.
This is what this thread is about.

hello everyone,
I recently spoke to a young woman at NMSU.Chili Pepper Institute and she told me they were currently doing a comparison study of Bhut Jolokia and Naga Moresh , maybe they will release the study results sometime this year.
she would not elaborate on what the study consists of in detail,so i could only guess about that.
maybe they will do some Fatalii testing too.I read somewhere that
Dr Bosland was thinking about it.

This will be my first year with naga and scorpion.
The only one I have grown is the orange hab. Man I love it! It has a distinctly smoky flavor and plenty of heat.
The 3 best dishes I made with them were: Seared Scallops with a habanero mango glaze, Hab salsa, and hot wings.

Thanks, I came across the pepper Lemon Drop, which looks interesting because it supposedly has lots of heat and a very lemony flavor....I was thinking of making a lemon marmalade with some Lemon Drop pepper....also maybe an orange hab. pepper jelly....hmmmm.

Fatalii (and devil's tongue which is very similar) have a great lemony taste with lots of heat. A must have in my opinion.

Sear the (diver) scallops in just a little butter on high heat until they develop a dark crust on each side(still rare in the middle). Salt each side as soon as you flip it.
Puree one orange hab, de-seeded, with one clove of garlic and roughly 1/3 of a mango, 1 tsp of salt. Cover the scallops with the glaze.
Stewed tomatoes (or fresh) 1 can, 1 clove of garlic, 3 orange habs, 1 med onion, 2 tsp salt. Chop or blend all.
Enjoy! I make my own chips to go with the salsa.

Lemon Drop is one of my very favorite peppers. I not only like the flavor, I like the texture of the flesh, it's so crisp and easy to work with in the kitchen.

She covers thr right bases, so I am inclined to think that she is legit. However, I don't think that we can cover every obscure pepper that seems to be hot.
Also we can't figure out the formula to convert a "9" into Scoville units.
chilehunter
01-22-2008, 10:51 AM
this is a good idea but why only have the hottest of the hottest listed ? since theres also other chiles ;) I'm not saying to list all of them but you could list alot of others also. & if this was a sticky it'd be cool for others to take a quick look to see what some chile rate for SHU levels.
cheezydemon
01-22-2008, 11:58 AM
That is true CH, and I would like to, but there are like 12 new peppers named every day it seems like!
If you want to start listing some, I will cut and paste it onto the list.

Do they do scoville testing for 'not so hot' peppers or is the SHU reading just an educated guess?

I have ordered from her before, and I've never been entirely satisfied with my orders. One time I got the plants I ordered, but all the labels were mixed up. And that's where I ordered the Chaco Yellow plants that turned out to be Aji Habanero plants.
She is very responsive to email, and if you're thinking about ordering from her you might email her first about your choices.

She probably doesn't do Scoville testing If I had to guess.
My guess Potowie is that a few of the most common have been done just as a point of reference. Jalapeno, Bell, etc.
The 1,000,000 score is meaningless until you realize that it is 100X the heat of a jalapeno.

Healthy Jalapeņo is about 4,000SHU. some are more.

Oops! I was referencing something that said they were around 10,000! so make that 200-220 times hotter than a jap.
Some crosses are even less than 4,000SHU. some are 1,000SHU.
cheezydemon
01-22-2008, 01:36 PM
I know, the "popper" peppers. Or the "appleby's" pepper.
As much of a chain as Chile's is, I have to commend them on keeping their jalapenos real. That may be the only chain that does.

Also we can't figure out the formula to convert a "9" into Scoville units.
What about something like each level (1-10) is about twice as hot as the one below it.
2,000 or below
4,000
8,000
16,000
32,000
64,000
125,000 (128,00 if one wanted to nit-pick)
250,000
500,000
> 750,000
On this scale, a 9 would be between 500,000-750,000 SHUs. I did something like this for the list I am trying to grow, just so I have a reference point. People who really are not that much into the terminology can understand if a pepper they haven't tried is 125 times hotter than one they have.
Mike

As far as I understand, naga, bhut are all variations of the name far the identically same pepper. Please someone clarify for the people that have been testing that thing those are identical plants but it seems some of the members here have other information that implies that these are not only separate plants but have different Scoville ratings please someone clarify.
