My wife and kids bought me a new smoker this year!! I got the CharBroil Smoker H2O. It's my first water smoker. I usually use my grill that I converted to an offset and inderect smoker. So I have to try this one out real soon!!!!! HHHMMMMM A nice venison roast I have may be the first victim of many!!!

Slow and low is the way to go!
No warmer than 250 and I'd wager.................. 45 minutes/Lb. Put a good mustard rub on it, hickory chips.... MMMMMMMMMMMMMmmmmmmmmmmmmmmmmmmmmmmmmmm!!!!!!!!!

True, Devil Duck? Great advice. I've always just checked periodically through the day with a thermometer. Of course, I've got one of those uprights with a dummy gauge.....
It works.
When I'm done with school, I'll get / make a real smoker.
