I am going soon going get a 300-400 gallon propane tank to make a smoker out of and had a few questions aboout my plans and hoped some people could help. I plan to use a 50-100 gallon propane tank cut in half to make 2 fire boxes for the grill. My question is on smoke stack placement and size. The grill would be mounted long ways on to a trailer and fire boxes would be about located about 1/3 up from bottom of the sides of the grill.
I belive (correct me if wrong) In this situation of having two fire boxes that having one stack located in the center would be best, and to have it flush mounted with top of the grill, located at the top of the grill, and larger at the bottom than the top would best right? or would it draw to much heat and draw all the smoke out? My plan is to hopefully be able to seperatly control the temps of each half of the smoker. Would this work?? I how do I know what diameter of pipe to use at the top and bottom of the stack? I was thiking about 11" going down to 7" would this be right for size of smoker and fire boxes? any comments on this plan, ways you think i can improve this plan. or additionaal plans would be appreacted.

I want it big as this will be for a small commerical operation and the two fre boxes are for more smoke due to size and to be able to control each half of the grill.

I have see one before like this I dont remember the stak placement also it was a sorta slide for vents on the fireboxes -- that is awfully huge.
I would venture to say two stacks on either end and not on the lid at around grate height. With two tanks on either side it might be difficult to "work" on the grill ie heat radiating from the tank. maybe one tank on the end up right? also with something that big you may want to consider tuning plates.... but you will have to talk to the Big DawgS on that I've never had one that huge.
Also be careful cutting that sucker and have a pro cut it for you. Remnant gas is no joke!!!

I have asmall one with one fire box, one stak, box on left side stak on far right not on lid, The vent on fire box and slide cover on the stak is how you control the heat and smoke, I have been to hundreds of bbq cook off and have never seen one with two fire boxes seems to me would be hard to control the temp. but if you think it will work go for it. may stak is 6in OD. Cook box and fire box are 20in OD.48inx20 in cooking surface.

Possible to piggy back on the back side and have vents across the entire back side. I would think it would be difficult to control the heat centrally. a baffle and tuning plates would help in keeping an even temp if go from one side....

THAT has 3 stacks !!! must be like a rib/sausage hanger or something on the end .... My family BBQ never gets THAT big :D I would love to have it!!! Im drawn to it like a moth to a flame -- Q pron

Two fireboxes would make it extremely difficult to control temperatures.

Looks like the stainless steel in the very front is a sink.

yes it does have a sink, fresh water tank, waste water tank, a rotiserrie, the box on the end with the stack is a warmer ( to keep your food warm or warm your buns up, the big red box (between the smoker and the sink) is a flat grill, the fire box is behind the smoker ....

these guys build extremely awesome smokers and grills...I am using alot of ideas from their creations on the one I am building for myself...
