This is my favorite party soup, great for a large crowd...Not so good for ya' but once a year can't hurt!

2 sticks butter
1.5 cups each celery, onion & flour.
10 oz Rotel diced tomatoes w/ chilies
4lbs. Veletta cheese
2 tsp white pepper
16 cups chicken stock
.5-1 bottle Carrot Karma Hab. Sauce
1.5cups Beer room temp.

Melt butter add celery & onion. Wisk flour slowly. Cook 4 min. Add all remaining ingredients except beer. Stir as cooking. Add bear near end as it all heats up. Serve with warm toasty bread hunks.
