Ok I am working on a new recipe for a hot sauce....more of a tropical habanero sauce. I think that smoked habys give more flavor than "fresh" habys do. Now I have been told by others that when you cook or smoke the Habys they loose some of their heat and that I should just use fresh peppers and add liquid smoke flavoring. Liquid smoke is almost over exagerated to me and doesn't give ya a natural flavor that I want. By smoking the Habs it will give a more natural, hearty flavor. But I want to keep the heat!!!! ( Ya know it is hot and humid in the tropics so a tropical sauce had better be pretty damn hot)

I would use a mix of fresh / smoked habs myself. Get the best of both worlds! A little bit of chipotle goes a long way in the flavor dept. You can add fresh for your heat. Stay away from liquid smoke.
