how ripe is ripe

Hi all, my question is this :HOW RIPE IS RIPE. I have various sized red ripe red habs/red savina's and normal sized Naga's. Does a small ripe pepper still grow bigger or when there ripe they stop growing bigger??:cheers::cheers::banghead::banghead:

when they start changing color they're done growing! most times they're done growing before they start changing color. be it smaller than normal or normal size once they reach their mature color (ripe) pick them! & easy picking doesnt mean its ripe enough either some plants wont give up their pods easily so cut the pods off (with clippers or ?)
