Last Saturday we from the www.capsaholics.de had ab board-meeting.
Hombre and I did the BBQ
We startet friday night at 11 pm with about 9 kg brisket,they were in the smoker for 14 hours,never higher than 150 F.I had to get out once at night at 3.30 am to check the fire.They were done at 1.00 pm on saturday.Then we startet the ribs....they took us 4 hours (two times)

Excellent - thanks for the link. This is just what I'm looking for, for next summer. The Outlaw grill, at 1000 sq inches, is the perfect size.

I'm in the same boat. Just finished the last of my wings. As much as I love them, that's 5 straight days of suicide wings for dinner. I'm ready for a platter of what Phil's cookin'.

Dude...that is so wrong to tantalize a guy in my shoes with pix like that. No grilling/smoking for me until June.

<sigh>

I could live vicariously through your pix, but the drool could hurt my keyboard.

Seriously....nice pix. When I graduate, I'm coming to Germany....so lay out some blankets and stock up on bier and meat.

Hey Phil - how do you reload your wood chips? Is there a hinged door on the side or back? I can't tell from the on line pics. Or is that what you order the side griller for?

Thanks Chuk I'm pumped, but the drag is, it feels like we're only weeks away from our first snow. I don't mind BBQing using a gas grill in the winter, but I doubt the smoker would be effective in cold temps. I may not get to use it till March or April.

I use mine all winter just have to be more vigilant and add more coals to keep temps stable once its heated it stays pretty hot --- Im in the process of creating a coal basket where I can swap out spent ashes with a fresh basket of new ones that I had pre lit with my charcoal chimney .... Dont use match light in 'er

I'll keep it in mind, but I would think it's hard to do in two feet of snow. Plus, I'm a 10 minute drive from nine different hockey rinks, and three kids besides myself that play. My winter focus is a little different than my summer one, so the amount of time I have to tend to the Q is drastically reduced. For example, we have a 6 hour bus ride to my eldest's game in Temascaming in Quebec on Friday...will get home at 5:00 Saturday morning, and then all three play Saturday...then two play Sunday, plus myself...and...well, you get the picture...

Thats what we call in Germany "Sparetimestress" :rolleyes:
No Problem with the smoker to get Spareribs or somethingelse after a game.Feed your smoker with ribs or a porcroast and enough charcoals.Almost close the airvent,and if you come home 4-5 hours later,glaze the meat and you have great food.And if there is snow....you don't have to be scared of a fire ;)

Well I was looking for a bew bbq for next spring..I bbq pretty much every day and just put the fourth element in this bbq this time cast iron...The way I see it as soon as they build the new lowes in cornwall you know what im buying lol hell I paid over 400.00 for this propane unit and its half the bbq as that one...

Well folks,on december 26 we'll have the next capsaholics BBQ.We will make ribs,pulled,pork,wings,beefribs and turkey-pastramie.

And while the last months I started to make my own smoked ham.
