I grow peppers -- wanna make complex hot sauce

I make tomato sauce, I grow tomatoes, I brew beer, I grow peppers (jalapeno, anheim, habanero) -- and I want to make a hot sauce where you ferment and all that junk---the complex way.

I see no stickied posts--can someone direct me to a thread where I might jump into your fine community?

Any tutorials of any kind I can see?

Well....Start out doing some researching some hot sauce recipes on the web. Yahoo, Google...whatever you like. Find one that you can understand and might like and expound on it. I make a hot sauce with beer and it's pretty good...just ask IGG.

For the fermenting stuff, that's a little different. I don't make mash, myself...mainly because I want to eat the sauce fairly quickly!!! Well, that and the fact I have a ton of people who want my sauce, so I don't have time to ferment.
