Just an update on our contest you should be excited by.
This upcoming year there will be more trophies with more categories A trophy for each category winner with the overall winners receiving the cash just like last year the highest score overall no matter what category wins the money with a 2nd & 3rd places overall wins cash also.
The categories depending on entries will be BBQ sauce ( with possible sub categories), Hot sauce ( with possible sub categories), Salsa, candy, Rubs, Marinades, and the infamous other category. Categories subject to change based on entries a lot more trophies and chances to win. Plus we want to add a peoples choice award. Also there will be more judges so those that judged last year aren't scared away we plan to have 25 or more judges so no more trying 90 plus samples.

We are looking forward to our contest. Have another meeting in a week will know more then and let everyone here know.
Looking for a even larger contest this upcoming year. Lets see if any of the amatuers can knock Vic from the top. He had some amazing stuff this past year. Be hard to beat him.
As for the pros W.O Hesperus will be hard to knock off in hot sauce with all his crazy combinations.
Cunningham's BBQ will be tough tobeat in the BBQ category just about the best I ever had.
Anxious to have this years contest. It just seems to grow each year.

CALL FOR ENTRIES WILL OPEN NOVEMBER 2007
· All entries must follow safe canning procedures (The only safe procedures for canning are boiling water bath for high acid foods and pressure canning for low acid foods.)
· All entries must list person or manufacturer of entry
· All entries must list name of entry
· All entrants will submit two (2) samples of each entry.
· Your product will be shipped along with entry form to the designated collection site of the contest and must be received by the entry date to be considered eligible.
You may enter as many products as you like. For instance, you may enter the mild,
medium, and hot versions of your sauce, but these count as three separate entries.
The Other category will be reserved for products that fit NO OTHER CATEGORY.
All products entered in the Competition will be judged "as is" and will
not be mixed or served with any other products before tasting.
All food products entered must be canned or sealed in accordance with standard food
and health safety procedures and protocols. Kato's reserves the
right to discard and disqualify any entries that are not properly canned or sealed,
according to food and health safety procedures.
Each product must be properly labeled with ingredients listed (first to last by amounts) along with the name of the product. All entries must be carefully packaged. The Florida Azalea Festival will not be held responsible for any damage incurred during shipping.
Entering the Packaging Category:
Two samples per entry are required. Your label will be judged on
Appearance, artwork, and originality.
Judging:
The judging panel will be made up of food industry professionals. There will be
a number of judges randomly selected.
All product sampling will be conducted under the strictest of standards using fair,
impartial and blind judging methods.
The decision of the judges is final, may not be contested, and in no way reflects the opinions of the above organization.
All entries will be judged on the following criteria: appearance, aroma, texture, flavor, heat, and overall impression.
Products in the Packaging category will be judged on: design, creativity, visual impact,
originality, and overall impression.
Each entry is judged in a blind tasting using a numbered cup to represent each entry.
Judges are not allowed to see any indication of the brand, owner, or manufacturer of
the product.
There will also be a People's Choice award, sponsored by TheHotPepper.com. The festival-goers will be the judges.
Announcing Winners:
Winners will be announced on (TBA).
Winning products will not be revealed until this time. Upon the
announcement of the winning products, the awards will be given to those who are
present. For those who are not present, the awards will be shipped to them.
Disclaimer:
Organizers will not be held responsible for lost, stolen, or damaged entries and reserve
the right to refuse any product that, in their judgment, may present a health hazard. In
any of the categories that are judged visually, Kato's has the right to decline any product it deems lewd or offensive. It also reserves the right not to list any
winning product's name on the website or in the magazine or any other distribution that
it deems lewd or offensive. All declared winners are final. No containers or leftover
products will be returned.
The contest rules have been established for the best interests of all concerned. In the
event of necessity, any rule may be altered at the discretion of Kato's.
In any event, all interpretation of rules and final decisions will rest with the judges. The
decisions of the judges are final, binding, and conclusive in all matters.
By signing the entry form, you understand these rules and agree to abide by the decisions of the judges.

Are we basically under the same rules as last year, or are those of us who do not have facilities out of luck? Not asking like I'm cheesed off or anything, just wanting to make sure I should be working on new stuff and will have the opportunity to show them there.
Also, maybe one catagorie could be condiments (meaning hot ketchups, mustards and/or mayo's) as it seems odd that in the '07they landed up in the same catag. as spicy chocolate.

I am ALWAYS in for a little smack talk! At the CASI state championships, I got a nice old fellow (John Rhyne, somewhere in his seventies I image) talkin mad junk. So, Chili Man deems this space (under the allowance of THP) a smack talk zone (say what you want, no apologies necessary cause its all in the spirit of fun!)!
So Dyce, you may as well pack up your sauce, cause I made mine with my eyes closed, with no sleep for ten days and a major organ injury. BOOOOOOOOOOOOY!

Well good luck getting your papers done. I know it can be a dogs behind to do anything that involves a gov. agency. You may want to push extrahard though, as I plan on making a mess of things again in 08.
Hey Mick, how do you plan on judging the rubs. My rub doesn't taste fabulous dry off my finger, but on my BBQ or a nice steak, it is a force of nature. Just wondering.
We have a little to share.
There will be a $25.00 entry fee for each product entered in each category ( example a product entered as a hot sauce is $25.00 that same product also entered as a BBQ sauce as well as a hot sauce will be $50.00) THP members will qualify for $5.00 off the entry fee. All monies will be used to buy trophies and ribbons not line our pockets. We are striving to make this contest huge.
The Hot Pepper will sponsor the peoples choice award and be a big help to us all.
As we receive more info we will share.

So for each sauce entered it is $25.00 and each additional catagory is $25.00 right? Like if I entered say 5 BBQ sauces and 2 Hot sauces + one hot sauce for packaging it would be $200.00 entry fee?

It is $25.00 for each sauce entered in each category. So you are correcet Dyce except there will be no packaging category this year as last year it was a hassle. Also since you are a member of THP for 7 products you would get $35.00 off.

Call for entries will probably be opened in November, we just wanted to announce it early so people could work on their sauces.
We have a little news to share. The contest will be held on Saturday March 1 2008 and winners announced Sunday March 2nd This should lessen our stress this year. We plan to have the Peoples Choice on Sunday. This year The Hot Pepper is sponsering the Peoples Choice Award this year.
Also we have big hopes for this year! Still the only fiery food contest that not only gives trophies but also cash prizes!

To let everyone know what has changed. We are no longer involved with the Azalea Fest. We are still going to continue with Kato's contest the dates have changed from the beginning of March to the middle of February. When we have the exact dates we will post them.
Everything fell through with the Azalea Fest. due to another organization taking over the Azalea fest. that we couldn't work with this has been our baby for a number of years and we can't lose control of our contest.
I hope everyone is still excited as we are. We still plan on cash prizes from the entries. The rules are still the same and the contact info stays the same. The only change so far is the dates of the contest.

For those who are too new to remember last year, the trophies are really nice and the cash is, well, lovely.

Yes get at many entries as possible. It'll make the contest a bigger and better event. Looks as if i'll be a judge again with fellow heat seekers Charline of Dixie Datil and Bob of world of Hot
The peoples choice award is being sponsored by THP( The Hot Pepper)
and will be a free tasting to all. Last year it was quite the scene. So I'm hoping for another exciting event where the winner is decided by a couple percentage points again.

I'll throw a little 'pain' probably into the 'medium' section if I ever get labels printed. Anyone know any printers who actually want work?

Okay now about the label question how are you entering first pro or amatuer? If Pro I would think you need a proper label. If not a pro then the idea of attaching to bottle neck or just written on paper your product name, ingredients, and process on canning. Someway attached to bottle.

hey kato is my sauce an automatic entry into the 'Hottest Hot Sauce' category , or is that a separate entry?
Pointless question really I dont have enough bottles of pain2 to be able to make two entries of it.
I'm also going to be posting on Friday, between 2 entry fees and posting 4 bottles halfway across the planet I'd sure hate to screw it up on a technicality, so can I run this by you please.
I'll have the labels with all the ingredients listed on laminated card attached to the bottles with rubber bands.
I'm entering the 'Amateur' section.
I'll paypal the entry fees tomorrow.
What else do I need to do? Forms to fill out etc.?

I have dream sof whooping you two years in a row. It has kept me going since the last contest ended. Oh well, I guess I will have to set my sites on The Big Bent!
Really loooking forward to this years contest, have already cleared space for the hardware. I'm gonna name the BBQ trophy "Bent Over" after taking the Nerd down.
As alway's to all who are not used to me, i love to talk trash, but mean none of it. It's just a fun and creative outlet. I think some out there think I am a jerk, but I am not. If you want me to stop, just beat me and I become righteously humble (Right Anija? Haven't heard much since you pounded me in the mustard catagory!)

Hey Mick, are you gonna be at the Miami gig? Also, I need to get a hold of more sauce, I will be down your way in April (Disney) or if you have some gallons available now, let me know, I should get at least two this time, more possibly.

Okay, one more dumb ass question form the chili man....is there going to be mustard/condiment catagory? I wa working on a new seeded hot mustard this morning and it is pretty good. If there is one I will send it on with another bottle of Cuddly Baby and add the $20 extra in my paypal. Otherwise i will just go the paypal route. (And Yes this new mustard is in response to getting crushed in the hot pepper awards, Anija!!!! Watch your back, chick!)

I would love nothing more than to sweep the mustard catagory thusly, and I have three viable mustards (the original Fluffy Bunny spicy mustard, it's older brother and spicier Fluffier Bunny and the new seeded Lumpy Bunny) but this is getting more and more expensive every day. If someone out there (Anija?) would put one in, I will be more than happy to send the other two. I brought about a cup of the new Lumpy Bunny toa small catering on Sat. night and it was decimnated by the crowd. So I am guessing it went over well.

Hows the field looking kato? Did you get a good turnout for the comp?
Chiliman Only the overall winners and runnerup's get cash.
Bent we have a nice looking field around 45 entries with the wing sauce category being the largest followed by BBQ sauce then hot sauce. So it should be a good competition. Judging is done blind all the judges see is a numbered cup.

I love this time of year. Right before the judging and after all the entries received.
I strongly believe this will be a memorable event. Our 4th contest and to have witnessed the growth. We have 40 entries of all kinds of products. Wing sauces from Defcon,Marco, Pittsburgh Pepper Company, and others BBQ Sauces from defending Champion Cunninghams & W.O. Hesperus, Chili Man, Hot Sauces from Bent Down Under & his Pain & Pain2, Intensity Academy sauces & Butch Taylor and his S.O.B.( Sweet ole Butch) sauces. So this looks to be quite a battle on Saturday.

Thanks to the gang at Kato's and to the THP for the Peoples choice division. I will enjoy another 12 months of acting as if I have any idea about cooking and making condiments. It feels pretty good to get on the board after the ass slappin I took in the THP awards.

Any news on the shipping of trophies? Just getting real nice up here in Charlotte and I'm wanting to get some new hardware to set in front of the cart to draw in some new customers. Also have the ACC tourny in town in two weeks and the visual would definitly help out.

Sorry for the delay in responding. You should have received yours by now and have probably noticed unless you were a 1st place finish no trophy just ribbons we had to do this year because we dropped the Azalea Fest. Next year should be back to normal wasn't sure on the amount of entries. Congratulations!
