does anyone have a recipe for a pineapple/habenero sauce or bbq sauce? i love the sweet/hot sauces and want to make one this summer. any help is greatly appreciated.

I had seen one in a book at home for Strawberry and Hab sauce I'll see if I can dig it up. Might have been Hab sauce and a Strw. Preserve... been a while...
1/2 cup strawberry jam
Zest and juice of 2 limes, finely grated
1/4 cup thin soy sauce
1/4 cup finely minced ginger
1/4 cup fresh mint leaves, minced
2 tablespoons habanero hot sauce
Combine all ingredients and mix well. This sweet and spicy sauce works great as both a mariande and a barbecue sauce. Since it
has sugars in it, do not brush onto grilled foods until they are almost ready to leave the grill. Great on Chicken and Pork
Apricot
1 medium onion, finely chopped
2 cloves garlic, minced
1 tablespoons cooking oil
1 yellow bell pepper, roasted, peeled, and seeded
1 1/4 cups water
2/3 cup dried apricots
3 tablespoons brown sugar
1 1/2 tablespoons apple cider vinegar
1 tablespoon powdered mustard
4 tablespoon habanero hot sauce
salt to taste
Sauté onion and garlic with oil in a large skillet. Add bell pepper, water, apricots, brown sugar and apple cider vinager. Reduce heat, stir together and simmer until apricots are soft, about 15 minutes
Combine with mustard, hot sauce and salt in a food processor. Blend until smooth.

I suppose you can omit the sauce and puree some peppers of choice and mix in the batch. Let me know if you try'em

Baloo's Ld50 Habanero Sauce
10 habaneros (dried) - seeded
550 g pineapple (fresh) - cubed
1 1/2 dl honey
1 dl water
5 cl cognac
3 tb lemon thyme
2 tb apple cider vinegar
1 ts cummin
1 ts salt
Mix all ingredients and boil 10 minutes. Put everything in the food processor and use the steel blade on high speed to make a smooth sauce. Add some water if needed. Boil 5 minutes and put in sterilised jars.
Not an original of mine, I found it trawling for recipes on cold and rainy night. If you make it let me know how it tastes.

If this is just for home use , just add a little fresh/frozen Lemon Drop, Aji Amarillo, Datil, etc. chopped pods to any standard pineapple jam/jelly recipe and use anytime. Hot pineapple jam is also great mixed with cream cheese on a bagel, a spoon....

I've done one sauce with pineapples. It came out pretty good. I think there's a lot of potential there. Habs and fruit just go well together.

I found a good recipe for a mango habanero sauce. If i had to describe it in one word, i think "badass" would have to suffice.

ps: the recipe could stand a bit more heat, don't be scared to make it with 2-3 habs, even with that many the burn isn't too bad. The ginger really sets the whole thing off imo, adds a nice spicy taste to the sweet heat.

try pineapple and hab mix in vanilla ice cream use cinnoman sugar totilia's to dip nice way to cool off on hot days

Here's some pickled pineapple with a mystery aji and some lemon drop vinegar added to each jar. The recipe is from the "Ball Complete Book of Home Preserving".
3 cinnamon sticks, broken into pieces
1/2 tsp whole allspice
1/4 tsp whole cloves
2 c brown sugar, lightly packed
1 c red wine vinegar
1 c unsweetened pineapple juice
2 c fresh pineapple chunks or spears
-bring first 6 ingredients to a boil, reduce heat and simmer for 20 min. Add pineapple and continue to simmer until pineapple is heated fully.
-pack pineapple into jars, cover with liquid, water bath.
(water bath pints 10 min)
Just like our "quick pickle" method for the hot garlic dills, it will take a while for the capsaicin to infuse into the rest of the jar. A few weeks to 2-3 months maybe.
This may end up being one of ham's best friends if I can get people to stop eating it all before I even turn on the oven!
