Anybody ever e x p a n d their meat selection to species that are a little....off the beaten path?

Alligator, Antelope, Bison /Buffalo, Caribou /Reindeer, Elk, Frog, Kangaroo, Kobe Beef, Lamb, Llama, Rabbit, Rattlesnake, Snapping Turtle , Venison, Wild Boar, Yak, Duck, Goose, Guinea Fowl, Ostrich, Pheasant, Quail, Squab, and Wild Turkey????

Maybe crocodile?

I've eaten crocodile, kangaroo, emu, ostrich, buffalo, frog, lamb, rabbit, venison, wild boar, duck goose, pheasant and quail. I've never eaten Wild Turkey but I've drunk gallons of it :)

that's a good selection they have. are you buying any Chuk?

What is a good way to grill venison? Someone gave my geekish beloved some venison for fixing their computer, and we tried grilling a couple of the steaks, but they were tough. I was afraid they would be, and we marinated them, but apparently not correctly.

The venison sausage was killer, though.

If anyone is tavelling through Jacksonville, there is a restarant called Clark's Fish Camp that has a lot of these meats on the menu: gator, eel, turtle, rabbit, frog, quail, ostrich, antelope, venison, buffalo, snake. Their prime rib is great too.

It is a very unique authentic place to eat. It is also a great atmosphere, 100's of taxidermy animals, watching gators swim by while you eat.

What is a good way to grill venison? Someone gave my geekish beloved some venison for fixing their computer, and we tried grilling a couple of the steaks, but they were tough. I was afraid they would be, and we marinated them, but apparently not correctly.

The venison sausage was killer, though.

What cut were they?

Chops are good on the grill -- I've been making an Italian soup that is fantastic -- but alas its hard to keep the grill lit with soup in it :lol:

Most need to be braised a bit before the grill....

There is a buffalo farm 15 minutes from my house. Those things are damn tasty, no wonder all the pioneers almost wiped them out.

Grew up eating what was in season. I'm a poor city folk now. I don't know how anyone likes gator, gamey-est thing I've ever had. Rustlers Roost down the street a bit has rattlesnake and I've wanted to give it a go. Eating rattlesnake is bad mojo to the local navajo to the point where they won't touch silverware that was used to eat it. So I might never eat it myself to avoid the further angering of local spirirts.

and there is one foolproof way to prepare all meats...jerky!!!

pam - cooking venison takes like half the time it does to cook beef. if cooking it on the grill watch it closely & flip it a couple times & by then it should be done. & depending on the age of the deer & its diet depends on the cooking method.
a tried & true method for cooking venison is sauteing(w/butter) the little venison steaks with fresh garlic & onions :drooling:

you want to serve/eat venison tender,dont over cook it

I've never had wild turkey, but I've had a free range heritage turkey, and I thought the flavor was so much better than a butterball. I didn't try and smoke the turkey...on a grill, you big goofuses...because I was afraid it might get dry, but it wasn't dry at all, so I might try that next year.

I dont want to scare you but if the deer came from a CWD area (chronic wasting disease) I'd cook it until theres no longer any pink just to be safe, & the CWD prions stay in the spine/brain not in the meat.theres no proof humans can even get infected from this. maybe I shouldnt of brought this up.
the sauteing w/garlic & onions is for cooking in a pan (I just had to say that, just in case you thought it was for basting like the other mixture butter/brown sugar/soy sauce) I tend to put more brown sugar in the mixture so its not so runny

No, no, you're correct. This was a gift, and I assume the deer was taken somewhere in upstate New York, but I don't know for sure.

Yeah, if I'm going to smoke poultry on the grill, I like to inject the breast with something, usually an herbal oil. It does keep it from drying out so much.

I've been to Rustler's and tried the rattler, it tasted like chicken (big surprise).
Rustler's Roost has one of the best BBQ sauces I have tasted in a long while.
Too bad they are south of the 49th, I'd love to carry their product up here.
I could only fit two of the big jugs of it in my luggage.

You know, once I tried to bring back several bottles of hot sauce and beer from New York. That was, of course, the time the airline lost my luggage. It finally got here two days after I did, and you could see the print of the tire that ran across one end of the bag. When I opened it, I was hit by a wave of stale beer and hot sauce smell. Ugh!

Three beers and one bottle of hot sauce survived. And the hot sauce turned out to be crummy. The beers were good, though. Grant's Perfect Porter, if I remember correctly, my favorite session porter.

Oh no, I meant you were correct to mention the wasting disease. I need good information to make good decisions. While I've read of the wasting disease in elk and deer, I don't hunt and so only get the occasional gift of venison. I might not have connected the dots between the two bits of information if you hadn't brought it up.

I agree with you that the venison is probably safe, but we had venison sausage, too; and I don't know who processed it. It's something I'll tell my Great Poo Pet of Love to ask about next time.

I've found with Gator it depends on where it's taken and time of year. I've had some fresh G that was wonderful- not gamey-tasting at all. I've also had some fresh G that had such a nasty-ass swampy/gamey after taste to it that would curl your spine.

As for Jerky, I agree completely!!

Stewed snake is good - very delicate gamey flavor, some chicken stock, young potatoes, whole green beans - anything else overpowers it.

By far though, the best odd meat I've tried was spit-roasted goat - we did feed it curry powder,mustard seeds, garlic & ginger for a week before its demise & hung it in a rainforest tree for 2 days for curing (was mid-winter 10C ).

the only one i've had on that list is wild turkey. but i've never eaten it before...used to get a bottle on thanksgiving. :P

my roommate bought some ground buffalo once to make some burgers..i didn't end up having any of it.

not sure if i could bring myself to eat snake. though i guess if i eat one animal..theres really no difference in eating snakes...its just all in my head.

Got a brass Turkey badge on the hand-made timber box, the chips are still sealed in shrinkwrap & I have the winners confirmation letter from W.T & newspaper page for public notice all inclusive. They say it was worth 800 when I won it 2 years ago...now it's an heirloom to my son.

I don't consider most of these on my list exotic, but maybe different to some of the readers.
I've had gator jerky, frog legs (taste like chicken), shark, deer jerky, dog (in Panama), Spam, hamburgers from McDonalds. btw, I LOVE MILK, especially goats milk and the unpasturized milk in Mexico. It's great for gettin rid of an upset stomach...

I usually try and get the red king. My gal has me split the legs and remove the meat. Once I deshell a pound or two for us, she has a big bowl with 2 sticks of melted butter and juice from a whole lemon standing by that I soak all the meat it. With parmagian toasted french bread and the chunks of butter and lemon soaked crab..it is pure evil.

In fact, the third pict is a rodent too... it's a "mara", also called Patagonia Hare. It's kind of a hare, with much smaller ears and quite bigger. They also walk a lot more weird!

Add to that: pidgeon. Camel. baby octopus (friend with sesame seeds. Yum)

Gotta tell you, lamb is v common over here. I have an aunt who used to live in france who gave us frog. Venison common pub food. Boar usually served at university balls for breakfast. Duck, guinea fowl and pheasant again v common, goose less so but not unheard of.

Horse, anyone? Dog?

always heard you can get an american (horse-loving nation) on his horse (belgian expression to upset someone) by saying that horsemeat is on the menu ... I don't see it on exoticmeat.com though and there is 'ordinary rabbit'. Dogs (belgians usually don't eat dogs except occasionnaly on a holiday in china) and cats (sometimes referred to as roof-rabbit), (musk)rat (sometimes referred to as waterrabbit)? Pigeons, almost medicinally used as a good diet (light for the intestins, sometimes even mentionned as aphrodisiac)

lots of exotic stuff to add to the menu...

I've had horse, many times.
Argentina is a horse loving country too, but we have a very stron italian influence, and Mortadella is originally made of... horse.
Nowadays it's made of other meats, though. But I ate horse many times, is not uncommon in the country.
It's kinda sweet.

judging by the sheer size of that spider, your location, and the fact that the image is titled "goliath" ..i'd say that is Theraphosa blondi which is a tarantula. possibly the largest species in the world too! just watch out for the hairs on the abdomen. :lol:

i've never had horse before, but i did see some butcher shops in italy selling it.

haha i'd love to..but there are already a few people doing that, and they happen to know a LOT more than i do about spiders. i've only been into that stuff for about 2 years now. there are people i talk with/learn from on other forums that have been into the hobby for a few decades.

Yabut, can the stand in front of a camera and look charming and enthusiastic? You can always get the information you need from the net or another expert, but telling it to the average Joe without being stuffy and boring is a real talent.

I eat VENISON ALL OF THE TIME!!! (All I eat pretty much that's red meat.) I just keep it simple. I don't like marinading them. I sprinkle on some season salt with what ever else I feel like. Then I throw them on the grill......Flip.......Flip.........Gruuunt...(Like it did before it died!!:twisted:) If you over cook venison it can be tough. Especially the steaks. I just eat them rare.:shocked:

Now about other meats I've eaten. Venison, duck, goose, pheasant, grouse, rabbit, elk, ostrich, alligator, squirrel,dove, and I was dared to eat live ants once. Oddly the things tasted good. Kind of like sweet tarts. I know I could eat them over and over if I had to survive!!!:shocked::lol::lol: I still want to try bear meat, caribou, and oddly there's a raccon recipe that I heard is good. Other than this recipe I hear it's greasy, but I will try it if I get a chance. As far as getting the bear meat. I will have to go bear hunting with my bow as soon as I get some free time. I've had pork as most people have, but I've never had wild boar yet. I plan on hitting the land of Florida next spring to hunt some with a buddy. Anyone got any good boar recipes.(In case the leaness changes the taste a little.)

I dont want to scare you but if the deer came from a CWD area (chronic wasting disease) I'd cook it until theres no longer any pink just to be safe, & the CWD prions stay in the spine/brain not in the meat.theres no proof humans can even get infected from this. maybe I shouldnt of brought this up.
the sauteing w/garlic & onions is for cooking in a pan (I just had to say that, just in case you thought it was for basting like the other mixture butter/brown sugar/soy sauce) I tend to put more brown sugar in the mixture so its not so runny

"big goofuses" ? is that towards me ? I cooked my wild turkey on the grill, I injected it with some sauce & basted with it also, the turkey turned out great (but I had it wrap somewhat with foil) but the legs got overdone :( I should of put the leg section on when the breast section was about halfway done to prevent the legs from drying out, the legs went towards turkey noodle soup.

This is true about the CWD area. Fortunately Michigan isn't one yet. There's some TB up in northern Michigan, but it's obvious to tell if it has it when you open it up and it's pretty much contained in a certain part of the state. When they found out there was TB in the heard they went overboard with Doe Permits. It makes sense because it thins out the herd and keeps it from spreading so easily. Stinks for hunting though. I feel safe eating rare venison from the areas I hunt. If you know it's from a good area I wouldn't be to concerned. That's just me though. If somewhere else I would cook it more therally.

rabbit - as for TB in MN deer, the DNR will try to shoot them all(planned DNR hunts) & give unlimited tags for hunters in those areas, yea it does suck for hunting but its for the better of the herd & other wildlife, to try to kill off the diseased animals.
as for bear I've been told it tastes great but then this also depends on its diet & your care after the harvest, treat it like you would pork. I hope to soon find out myself this year, it'll be my 1st time going after bear so it should be really interesting ;)

Yeah, I don't have a problem with that plan. The DNR has implemented that plan on the herd with TB too. They'll come back. I honestly don't hunt in that area anyway. I have heard that it has obviously hurt the deer hunting in that area. Then again. That was the plan to reduce the herd size. Hope it works. It seems pretty contained so far. They've gotta do what they gotta do. Know what I mean.
I myself have never gone bear hunting yet. I put in for a license up in the UP (Upper Penninsula) a few years ago,but haven't put in for one yet again. I've been really busy. I think I will start putting in for one on a regular basis starting with the next application though. I still get to keep my preference points since I've already applied. The average wait is 2 to 3 years. I have a friend up in the UP that really knows the area and the bears as well. When I get one I will be searching some areas with him......Oh, yeah before I forget....GOOD LUCK!!!! If you get one let me know. You can PM me some pics!!!

I eat VENISON ALL OF THE TIME!!! (All I eat pretty much that's red meat.) I just keep it simple. I don't like marinading them. I sprinkle on some season salt with what ever else I feel like. Then I throw them on the grill......Flip.......Flip.........Gruuunt...(Like it did before it died!!:twisted:) If you over cook venison it can be tough. Especially the steaks. I just eat them rare.:shocked:

As much as I eat deer and considering the fact that I've eaten it as well. I've never made it yet. I plan on making a bunch of it this year though. I intend on making some homemade brats as well.

I just picked up a hald of pound of BUFFALO TRI-TIP!!!!!!! Dave and I are going to coat it in freshly cracked Peppercorn (litterally cracked on the spot 5 minutes before it goes on the grill) and grill it to Medium/Medium Rare (the way it's ment to be cooked)

Did you know "Buffalo buffalo Buffalo buffalo buffalo buffalo Buffalo buffalo" is a grammatically correct sentence ?

Your making me jealous that sounds GOOD!!! Also reminds me. I forgot I ate a buffalo burger at a restaurant once. GOOD STUFF!! To bad they didn't cultivate those instead of cows. Honestly that meal sounds GOOOOOOOOOOOOD!!!!!:drooling:

I heard in Cambodia they have a liquor that some tribe makes that's made from chewed up fruits. Then the saliva is left to ferment. Heard it's REALLY strong!! Maybe you could use that to reduce your fear of trying it.;):twisted::lol:

Ok,insects may not real meat for us but we also had a croco-stew wich was pretty hot (The bartender of "our"bar made it especially for us.We complained to him that we are in Thailand,beg for hot food,but all was just medium-hot.I don't know what he put in but this stuff burned twice.

There's a store near where i live, Jungle Jims. They have all kinds of exotic meats you can buy. A buddy of mine come over for a weekend and we went to Jungle to get some Little Kings, JJs also carries a huge variety of beers from all over the world. Any way we went through the store and ended up buying several different meats. Got home and had duck breast in the oven. Huge scallops in garlic butter on the stove. Alligator, buffalo, ostrich, and elk out on the grill. We even tried some canned smoked rattlesnake. The rattlesnake had too much smoke IMO so couldn't tell what it tasted like. Everything else was real tasty. The wives wouldn't try any of it but my buddy, my son and I sure ate it up. Washed it all down with a couple cases of Little Kings Cream Ale.
