It's now well into April. Who's got their BBQ workin'? With all the cold wx hanging on...we need some bbq eye candy goin' on. Post your BBQ pics ya'll! Chuk...you got your Texas grill fired up?

I usually do 160 pounds at a time. That's how the sauce business got started. Love cookin, but man O man the work. The meat goes on at 0630 and I'm finishing up at 11:00 PM. Of course beer is involved!

Working the Pulled Chicken BBQ for work today. I know, I know, pork is king, but for the time, the chicken smokes much quicker and if'n you use thighs, the texture is simiiar. Add Chili Man's award winning BBQ sauce, and WOW it's Q eatin time!

Only pics I've got are from a bbq last year. It's gas (booo) and burgers and sausage (boooo) typical english bbq really.

The chilis were my doing. lol. They are pretty hot for amateurs. I was brought up on them :).

Me and my friends bbq come rain or shine or even snow. Many a time we've been out in the winter in the pouring rain with an umbrella bbq'ing it up. lol.

Like I said, our bbq's are pretty legendary lol.

I'll taqke pics of our bbq next saturda and post them up :)

Q working? I never stopped BBQing. That's thre great bonus of Los Angeles, you can still grill when it's 40 degrees out. I do 90% of my BBQing at night from arounf 8:00-11:00PM so it's hard to get really good meat shots. But I'll see what I can dig up.

Hey Blue that is a very nice set up ya got there!!! I like very much!!!!

I'm in the process of building a LARGE smoker. Useing 30" pipe for the main smoker chamber and 18 - 24" for the dual fire boxes and a 36" pipe for a stand up "warmer or oven" (second smoker chamber) for hanging meat (like sausage) and a grill area all built on to a nice neat trailer.

Grilling is hot and fast like you would use on steaks.
BBQ is low and slow like you would use for pulled pork or brisket

That is a nice rig. Do you use propane to start the coals? or as a warming stage area type of thing.
Are you a member of any Q'ing boards? I have been going on and off going to http://www.barbecuenews.com/forum/ for awhile, bunch of great guys and gals there that are in comps and catering the Q knowledge there is top notch IMO

I get my grill going from time to time in the winter. But when the weather gets nice, I'm on it almost 4-5 times a week. I don't have a smoker, but I've figured out a way to set the coals so it acts like a smoker.

Next up on the DD list of things to get...a nice little water smoker.

Yup- you can't see it in the pic, but propane fires the charcoal in a basket, it is dumped in a side bin and shoveled under the meats.

Damn Blue, that's one hell of a rig.


We did some steaks, sausage and stuffed jalapenos last night. Just on the Weber. There was a storm front coming in so wee had to be quick ( although I've been known to move operations under the carport if need be).

Sunday I hope to fire up the smoker for some chicken and maybe pork.

Wind has finally stopped blowing here in LV. The dang' same wind that knocked the tops off of my jalapeno and tomato plants. Oh well...they're plenty stressed now. Babybacks are headed to the smoker!

From last nights grilling season, I was just coking for myself and didn't want to do anything fancy. I did two cuts of filet mignon and a potato.

I use mostly pecan and I scavenge a lot of it around here after a big storm. Just drive by houses in the right neighborhood and there it is stacked out by the street for me! It pays to own a chainsaw!

I have been known to use hickory, mesquite and oak as well.

The butts have been shredded and mostly consumed so they're not too photogenic at this point! I'll shoot some pixs next time.

I can feel it coming...

Gotta' tell ya' Chuk, being a Texan and all I know how some in Texas can be a bit uppity about the meat, i.e. if'n it ain't beef then it ain't bbq. Nice to know another Texan with good taste who likes a good rack of babybacks or porkbutt! I'll have some Q pics by this weekend.

Reminds me of the pulled pork with vinegar based sauce. Hash and rice from the Carolinas. I played hell xplaining to the local hardheads in the hood that pork is excellente'.
