I've seen order magazines at least 100 some odd pages thick. I've visited stores with 300+ sauces on display. I've been to a conventiion with 600 or so hot sauce vendors/creators with 3-40 sauces each.

So my question to you all is; How many sauces commercially available do you think there are out on the market. Seperate from that, how many overall vendors of A) their own hot sauces AND B)The overall stores that sell hot sauces (NOT INCLUDING THE ONLINE/INTERNET STORES)?

If by commercially available you mean available for sale to the general public regardless of market availability (regional/national/international), the list is long and varied. I am of course including people that make hot sauce, BBQ Sauces, salsa and any other fiery food products. We're all one big happy family.

Last time I spoke with someone in the know down south (U.S.) they told me that there are around 3500 sauce manufacturers in the U.S. with more added every day. That includes everyone from Blair and Cajohn to Joe Six Pack's butt burning sauce.

In Canada, there are around a dozen makers (full time/part time) some with 2-70 products in their repertoire.
We have around 1000 labels on our wholesale price list and we stock around 500 in store here in Saskatoon.


IMHO, I'd say there are easily over 10,000 sauces on the market (locally all the way to nationally marketed) in North America and that does not include store brand sauces which every national chain has copacked by someone or other.
As far as stores go, if you're speaking of niche market hot sauce specific stores, again, in North America it's hard to tell, but I'm sure there's a list out there somewhere.

As well, just thumb through a Chile Pepper, Fiery Foods and BBQ or event Taste of the South Magazine and you'll find hundreds of ads from sauce makers listed, some of which have a store front of their own retailing their product as well as other labels.
Fiery Foods lists 92 hot shop retailers on their website with over 900 listings ranging from manufacturers to non profit organizations somehow related to fiery foods products. Here check it for yourself http://www.fiery-foods.com/directory/ffd_search.asp

Now one thing you shouldn't discount (not saying that you are) is the online stores. Some online retailers can generate $250,000 in revenues in a year without the actual overhead of having a store front but have amazing customer service and selections. Shopping for hot sauce at home in your underwear is very appealing to some people, I know it rubs me the right way.;)

Perhaps we should start a running list of Hot Shops and hot sauce makers in North America. Interested??:?:

I suggested over a year ago. The restaurant listing by state is where they are supposed to go I think.

Online shopping is really convienent for those of us not near a major city where most hot shops would be located.

I know when we started almost 10 years ago there were close to 6,000 sauces available. I would think 10,000 is a resonable estimate now days.

Well, out of those 10k, how many are re-labeled? Shoot Danny Cash alone has over 50 clients that use his sauce with their label.

There are many sauces private labeled. 50 that's it. I'm sure Danny has more clients then that. We have over 50 ourselves. I remember when Danny Cash first started. He was such a nice quiet guy. Now look at him. All kidding aside we were there when he came down to Albuquerque the first time they exhibited. and had maybe 5 sauces and a mustard he made in a Church Kitchen. They have really grown that company. That just goes to the point of there being 10,000 sauces. Many sauces are private labeled through the co-packers that help many small restaurants. stores,markets, and other establishments. Like Bars and even local minor league sports teams have an identity other then there primary business.

I'm getting close to ordering some hot sauces I've never had before (since I'm running out & wanting to try some new brands)
I've looked at the hotsauce.com & such a good site to choose sauces & then I looked through some of the members here at their websites to look through their hot sauces. but I'm kinda disappointed that none had the ingredients listed for the hot sauces, unlike the hot sauce.com which had for each brand of hot sauce.

I'm a guy that doesnt want to buy certain hot sauces with certain ingredients in it, no point in wasting money on something I wont like from the start. I know you guys might say thats our little secret but the FDA makes you put them on the bottle anyways so its not a secret, it'd just help people to choose which version/brand of hot sauce to buy instead of going blindly & buying a hot sauce they might not like from the start.
