What's in your fridge?
At work, I have a bottle of Da Bomb: Beyond Insanity (http://www.originaljuan.com/product.asp?prodID=12). I usually put it in my soup, or if I buy something at work, it goes in my ketchup. I use about a tablespoon a day. It's almost empty. Not sure what to replace it with. Probably Jersey Death Sauce (http://extremefood.com/product.php?id=138).
At home, I have half a bottle left of Stupid Hot (http://wildpepper.com/Merchant2/merchant.mv?Screen=PROD&Product_Code=43ST&Category_Code=HS). I can't use quite as much as I do the Bomb. It'll take a while to finish this one off. I usually use a teaspoon per supper, if that.
For flavor, if I want to have a healthy dose of real hot sauce on something, I have the 3 bottles from Danny Cash (http://www.dannycash.com/) opened in my fridge. Those won't last very long, since they're not very hot.
I also have a flask from Hoboken Eddies (http://www.hobokeneddies.com) opened in the fridge. It kinda sucks, so I'm not too keen on finishing that anytime soon. (Lucky me, the crappy ones come in a BIG flask)
Wow Dustin! I don't think I can compete with the heat of them sauces. There are some wicked ones in that bunch. But between our fridges at home and the warehouse we have over 60 open bottles of sauce. We usually turn them over every couple months Danny Cash sauces are good I like the habanero mustard best So if you think his sauces are not that hot. We're sure to disappoint as all of Kato's are made with fresh chiles no extracts. with loads of flavor
Peppermaster makes sauces with plenty of heat but no extracts that I think are plenty hot but still with flavor
Most of the sauces you named are extract sauces and are to hot for alot of people myself included as I have tried a few of those i didn't really like them and thought they were very hot and lacking flavor. We have a friend who says they can taste the fruits in Vicious Viper I've tried the sauce and could taste nothing beyond the extract.
It shows again how relative heat is to Dustin nothing seems to be to hot me on the other hand finds Dave's original Insanity sauce to hot.I like to think i can eat almost any chile but I know I can't handle the extract sauces.

Ok, hmmm lesseee
Aside from at least 24 different batches of various heat levels of peppermaster, we have...
Dave's Habanero
Frank's Chili Lime(?)
Frank's Red Hot
Matouk's
Kato's Meaner Greener (Good cilantro)
Kato's Island Sauce
Fire is hot
Tabasco green in miniature -- it was a fit of pique
Le Cabanon Harissa
CattleBoyz Honey Hot
Wurzig Sharf
Walkerswood Jerk paste
Three Arch Hot Honey mustard
Wings' hot sauce
I know there are others, at least one hot pepper oil, whose name escapes me, and at least two powdered rubs; and then there are the various bbq sauces, but that's for another board. ;)

Oh, just because I have 2 extract sauces going, doesn't mean I don't like non-extracts. I've got 30 bottles in the basement anxiously waiting their turn!
And when I said Danny Cash's wouldn't last long because they weren't very hot, it was only in comparison to the 1+ month it takes for an extract. It's actually a compliment: It means I pour them on thick & heavy thanks to the taste & heat level.
I used to have LOTS of sauce open at once, but they seemed to dry out sometimes if left open too long, so I like to store them in the fridge instead. And our fridge is much fuller than Nick's picture up above. To be fair to my wife, I limit myself to what sauces will fit in this x-mas tin I have in the fridge.
By the way, I've had very similar thoughts about Dave's Original Insanity sauce. It's hard to believe it's only about 52,000 SHU. There is truly something nasty in that sauce besides just heat.

and at least two powdered rubs
Oh yea, thanks for reminding me. I have Blair's "Death Rain - Nitro" (http://extremefood.com/product.php?id=105) for powder. I put some in my keychain holder-thingy (http://www.mohotta.com/ShowView/product/230/17) so that I'm not stranded with bland food at restaurants. It's a life saver.
Nice lists so far. So much to choose from!

TB... I gotta ask this, because you're not the first person I've met who has said such a think...
If the sauce "sucks" why are you keeping it. That doesn't make sense to me.

Because it's my mission to eat every hot sauce.
Lots of people collect hot sauces, right? (Mint, unopened, etc).
Well, I kind of wanted to do that, but knew that it would be impossible to buy them all. Way too much money, and way too many! So the only way I figured I could 'filter' the collection would be to keep the empty bottle AFTER I finished eating it all.
Hey--it's a reason. I didn't promise a GOOD reason :)
Tina Brooks
06-02-2005, 05:00 PM
lol, actually, it's a good reason... Fwiw, another thing I'll never understand is collecting the full bottles... Ya, ok, Blair's whatever looks much cooler with the wax intact, but why bother?
next question... Is it a weird psychological thing where you wouldn't feel comfortable adding the empty bottle to your collection if you poured the rest of a hideous sauce down the drain rather than eat it? Best never buy Satan's Blood then. That sucker is hot, but it's one of the worst things I've ever tasted. ;)

Oh, I'm sure a psychologist could say many things... :D
But I don't really think about it that much. It's just this way, I'm able to point at the collection and say, "Yes, I ate all of those"
There's a few in the collection that I've snatched from a restaurant that were only 1/2 full at the time, and I quaffed the remainder before the meal was over. It doesn't bother me in the slightest that I didn't eat the full bottle. Guess I'm not a purist afterall.
Since I write a review of each bottle I finish, I figure it goes hand in hand with my method. At least this way each bottle gets a fair trial. Besides, the reviews get pretty colorful when I have to choke down the whole bottle! The adjectives I use might not be as exciting if I had only sipped a tablespoon and poured the rest down the drain :)
Fwiw, another thing I'll never understand is collecting the full bottles...
Resalability. My own definition of collecting is surrounding yourself with items of value. All collectors drool over the completeness of their colletion, rarity, and potential $$$ value if they ever sold it (Which they won't).
And you just can't sell open bottles of hot sauce.
Kato's has just emptied the fridge at the warehouse so as to move the warehouse this next week.

I'd think so too, but I've seen people selling open bottles on EBay... of course, we've all seen them selling all sorts of things on EBay.

MtW Red Savina Garlic Sauce
These don't even include ones that we are due to open very soon (Kato) and are sitting in our "on deck circle."
Most open ones at present are leftovers from our Features from our blog. The more Features we do, the harder it becomes to use up the ones we have. 8)
Dustin, try and give the Predator sauce a try if you like the heat. I used to take it to work with me (or keep it there) when I was doing my ER rotation last year. Great source for heat + a little flavor.
Is that the Great White predator from Peppers?
Our friends bottle predator for Peppers.
You'll have to ask bodines about them making Rock Candy from Predator Back before Peppers labeled it predator it was a sauce called something else and they wanted to advertise there co-packing company and thought they could come up with a gimmick to promote this new extract sauce to give out @ the fiery food show. They had paramedics, the police, and Dave Dewitt telling them no more rock candy. Looked innocent enough but was deadly as the candy got stuck in your teeth around your gums Wow!
That stuff is fire and I can't taste anything but the heat of that sauce. Wicked stuff for sure.

Rock Candy made out of extract? Hahaha! "When bad things go WRONG!"
I remember way back when, ordering from MoHottaMoBetta some 'hot' lollipops. Our boss had some very spoiled children, who'd sometimes run around during work and steal candy from people's desk. So I strategically placed the Habanero Lollipop on my desk, but it was never taken :(

Mick,
That rock candy story is wacked!! I feel bad for any kid who unknowingly damaged their insides on stuff like that. It's one thing for us, as heat gourmands, to do so, but quite another for undeserving victims. Judging from other posts, there's no shortage of deserving victims.
The sauce is Predator (great white shark) from Peppers. I've always thought the taste was good for an extract sauce...meaning you were able to detect a hint of taste before the heat seared your taste buds. Great source for heat. I like using it in Cajun food, like jambalaya or red beans & rice.

Rock candy...
Something tells me that this was an ananchronism... Maybe time to look into it anew. Hmmmmm

Hehehe. I'll have to pick some up sometime.
The Chili Pepper Emporium (http://www.chilipepperemporium.com/snacks.htm) is the only link I can find with some:
#914 Taffy--Cinnamon (made with "You Can't Handle This" hot sauce) $ .25 apiece
#915 Taffy--Strawberry (made with "Predator" hot sauce)

I think we actually visited there back in '01 during our one & only visit to NM when we visited Joe's brother and attended the Fiery Foods Show. Their stuff is a little pricy on average, but you can forgive them a little by having a good selection of spicy stuff that isn't hot sauce.

I was at their store just this past March. I bought a few items that were a little bit different, like the Sparx cookies, but they were pretty out dated. Bummer

I finished off my 3 Danny Cash sauces, so went down to the "wine cellar" (A.k.a. the Hot sauce box in the basement) to see what I could replace it with.
Was I surprised to see a bottle of "Predator"!
I just cracked it open this morning and tried it. Used a coffee stir straw, dipped it in a few inches, took it out and sucked the insides out. Pretty good for an extract sauce.
Gonna have to figure out how to use it. Too hot to use as ketchup. Too mild to mix with soup. Probably use it as a sandwhich spread.

Wow, you have some serious capsaicin tolerance. I've used it liberally, although using it as a condiment for sandwiches might just do me in for several hours.

Yea, I mispoke. This is actually rated hotter than Da Bomb I've been using in my soups. I may have to rethink the sandwhich idea. (I had visions of spreading it on super THIN)
We'll see. I just thought it was too tasty to drown in a soup

Now you gotta know that I worry about you guys actually eating the sauces with chemically extracted oleoresins... Is it just me or do you guys not taste that chemical tang? And if you do, you do, you must like it?
I don't mind trying them to see how hot they are, but to eat such things as Da Bomb regularly... maybe if I could get natural peppers that hot.
