I just had my first complaint about one of my bbq sauces....They said it wasn't as sweet as last batch and the said it turned out a lil thin....any advice on thickening bbq sauce without changeing flavor? I read add more corn startch and I read add tapioca startch.....any advice? usually my bbq sauce is nice and thick...

ya I did. It is a lil different tasting....I made it the same way I always make it. I dunno what happened.

Think cooking time on this one. Probably didn't cook as long as your previous batch. Reduce or simmer longer and it will thicken and intensify in flavor.

texas blues could be right on this - if you used the same amount of ingredients you used in previous batches but managed to 'some how' produce a larger amount then he is correct.
if not, then maybe your measurements were out - or a combination of the two.

Here I was worried about the sauce not tasting right and it surprised the heck out of me by taking 3rd place in Kato's Contest!!!

Must be some dang' good sauce to screw the pooch on the recipe and still get 3rd place. Maybe you should do that every time. Congrats!!

Hey DevilDuck..
that sounds good. I have to make another batch of the BBQ sauces. As soon as they are ready I will pm you. When I make my sauces (since I make them at home) I only make small batches up around 2 gallons so it doesn't last long...lol...I think I need to get a larger pot or kettle...lol...If any one else wants to trade sauces let me know as well...
