Yeah, after it was cooked with dry spices :)
I put a mountain of chicken on the tortilla, but had no problem flipping it.

It's a gas range, probably medium to medium-high, on one of those cast iron grills, flat on one side, raised on the other.

Ah, cast iron, that's probably where I'm making my mistake. Mine gets cooked in nothing flat (like 2 minutes) on my stove.

Cast iron, you can cook them on near-high heat for about 10 minutes, no burning. Nice ****en brown, everything melty and hot ;) No oils or sprays.
