I had a bad October. One of my friends who helped me through it really likes Tobasco Chipotle. I've always thought I could do better and have told him that some time I would start a sauce for him. Well tonight was the night. I expected at least 2 or 3 incarnations before it met my standards but I hit it just right. I know a guy who brags about blending a can of chipotles in adobo and a can of tomato paste and how much everyone loves it. So I started with a can of contadina tomato paste (no additives or other spices in this brand) and stired it into a half cup of sauted onion. I'm lucky enough to have a grocery store where I can buy chipotles that are dried and not in sauce. I reconstituted them and a couple puyas in an old slow steam meathod I knew about for sun dried tomato. When I uncovered the container the smokey smell was fantastic. I added some paprika, garlic powder, sea salt, white pepper and blended it with a healthy dose of vinegar (after all, it's the tabasco I'm trying to beat)

You know how sometimes you'll just absentmindedly lick the spoon...I did a double take, this is great.
