Hey Folks:
I'm the owner of Blue's Carolina Pepper Sauce. The hot sauce blog did a favorable review of my sauce a few months ago. Since that review the sauce has expanded into about 80 markets.
I am currently contemplating a limited edition habanero reserve sauce and would like to know if anyone would be interested?? The sauce would be a blend of cayenne and apple smoked red savina peppers. Any serious reviewers can email me at bluesbbq@carolina.rr.com and I will send a sample. If the interest is there, I will send the formula to my copacker for production.

Samples of my prototype will be sent out. Plz keep in mind that this sauce, if well received, will be a limited edition, with limited quantity. The sample you will receive will not have a label, but it will be tamper proofed. Your feed back will determine if I procede. I believe you're in for a treat.

Well, I got my sauce in the mail today! Thanks Blue! I'm going to cook an elephant like you website says and try it on that tonight. I should have a review up this weekend. But as of right now, I like! It's got a beautiful sweetness to it and is not very hot. I would appreciate a ingredient list (unless you don't want to give it away, then I understand) if you can provide it. A bit watery(ie: not thick) but that can be good too! I'll post more once the tests are done.

No seriously, at this stage of the sauce, I think it still needs some work before a full review. It has potential.I want it hotter, but if I add any more habs. it will alter the taste. I'm considering extract, but I've never used them before. I'd also like to thicken it ever so slightly. Any inputs????
Is that a 5 string base you're playing?

If you are reffering to me, then nope, all I like to play are four stings for bass and 6 or 12 for guitar.
Stay away from extract. Almost all of the times it is used (with some exeptions...Defcon...E.Z. Earl...I'm look at you guys!) it carries with it a metalic taste that tends to ruin sauces. One thing I did notice about your sauce was the small heat it carries. But the taste is really good. I'll hold off on the published review. If I have some tips on improvement or areas to improve it do you want that posted here in this thread, or do you only want pasitive things said here and any(if there are any) negative things PM/emailed to you?
And I belive you can use Xanthan Gum to thicken it...I'll have more things to say once I do my little experiments with it tomarrow.

Thickening tip:
Either keep your peppers in the sauce and don't strain it, or just a touch of corn starch.

New sauce is much better! Thicker, hotter! It's on the sweet side, but that is what you are going for, a hot/sweet sauce, and the balance is much better. Go for it! I'll be using this bottle. Good job.

I used it as a kicked-up ketchup on fries. Works well. Something tells me this would be good on seafood... oysters, shrimp. I don't eat that stuff, though.

Do ya think this product is worth the cost of re-labeling, test run with co-packer, marketing, etc. Initial cost would be around $2,000.00. just to get going.

Actually, I am an FDA approved manufacturer so I could do limited quantities out of the house. My only major cost becomes label design and printing costs. I'm already sitting on pallets of bottles, caps and shrink bands. I'd put the price at 5.49 for a 5 oz bottle. Any interest?

To me this is a niche sauce. It's good on specific things. If you market this well, targeting those specific things, it will do well, but if bought as a "hot sauce", it won't do as well. The sweetness must be mentioned. Just my opinion.

I would buy it, if possible I would like to have this sauce around the house. I truly enjoyed it last night on my taco pie, excellent job. You have a customer here. I think that a five oz bottle would go fast though.
To All:
I prefer the 10 oz bottle but have been told by the folks at Peppers that 10 oz bottles are hard to sell. Peppers loves my Carolina Pepper Sauce and do carry it, but it's not selling very well. They can't figure out why except for the size of the bottle. It sells well to the military in Iraq, probably because it is a 10 oz size. Go figure??? In actuality, the product that goes into the bottle is not where the cost is. It's everything else. :?:

I'm a small frye, so I think limiting this sauce to in home production is probably the way to go. I'm sitting on about 10 pounds of applewood smoked red savina habs, so I might just make this sauce till the habs are gone. The price will go up to +/- $6.99 A BOTTLE.mORE INPUT WOULD BE GREAT!!!!!

Blue's - I must commend you on a fantastic sauce! Thanks for the prototype sample. Currently it is my new table sauce that I put on everything. Job well done!! My wife isn't much of a chilehead but your sauce even has her eating it on most everything. Can't wait to get a hold of the finished product.
