I've heard talk of special ingredients that aid in upping your PH and shelf life. They all have weird names and I don't know where to buy such ingredients. Can anyone help me figure out what these manufacturor's ingredients are and what their specific uses are?

The most common preservatives (other than vinegar) are sodium benzoate (antifungal/mold) and/or potassium sorbate (antibacterial). Preservative level is usually best if it is shown to be "less than 1 10th of 1 percent". PH level is a key factor in allowing each preservative to do its proper work - especially if you use a combo of them. Of course, all natural is best if you can make the vinegar do the job for you without screwing up the desired flavor profile. This is an area where you really should consullt a food chemist to CYA! - E.Z.

I'd strongly recommend avoiding adding such preservatives. More people than you think go out of their way to avoid such things.

As E.Z. Earl says, all natural is best.

Your first consideration will be quantity you can order. These preservatives are considered industrial food chemicals, and are usually ordered by food processors in large quantities. If you decide you need them in your formula to be safe, I suggest you "Google around" looking for smaller suppliers in your area. Now you can see why I always say there are 2 types of people in the world: those who hate R&D, and those who haven't done R&D yet!!

Thanks, Chuck. I am glad to be here. I am impressed with how well The Hot Pepper is organized and laid out. At my age I need simple things!! A good woman, a good horse, and a good meal about does it for me (not necessarily in that order!)
