I didn't make these...but I had the Firecracker Stuffed Jalapenos from On the Border while out with friends tonight. I had never had these before & I was very surprised @ the awesome flavor & considerable heat! If you aren't familiar with these, they're tempura fried jalapenos stuffed with a blend of cheeses & shredded spiced chicken. I definitely recommend them!

Ohhh, that sounds awesome. I've always wanted to fry 'em up tempura style, just haven't gotten around to it.

Here's my it's-too-damn-early-to-cook snack. :-)

It's got diced up leftover chicken rings w/ onion, jalas, funky hab, Garlic pepper salt, curry powder and bits of jalapeno-habanero pepperjack cheese.

Then theres 12-grain bread spread with jalapeno/hab sauce on one side and mayo on the other. Cheese slices added.

Now assembled and wiped on a side with a stick of butter, placing that side up in my Cephalon 8" skillet (the bumps make great grilled sammich) that already had a wipe with the butter. Wiping the pan first not only puts butter in it, but gets the butter stick warmed so ya don't make a mess of the bread when ya wipe it. :-)

Hey ya'll once again from the big dry ditch here in Las Vegas. I had some big japs and wanted to stuff them for poppers but couldn't make up my mind. I found some very nice ground lamb at the local grocery so...

olive oil
sea salt
fresh ground black pepper
fresh garlic\
ground cumin
red bell pepper
anaheim pepper
yellow onion
ground lamb
sharp cheddar

I sauteed the whole mix up and then cooled to room temp. Added grated sharp cheddar, mixed well, then stuffed and baked @400F for 12 minutes. These poppers turned out to be some of the best I've ever eaten. The lamb/cumin/jalapeno trio was magnifico!

Those look DELICIOUS TB!!! I'm thinking about trying to make some stuffed serranos tonight. I wonder how those would turn out.

Anyhoo...today I made my usual "hangover cure" of 2 strips of bacon & 3 scrambled eggs w/ 3 Mezzetta habs mixed in. Holy crap I got some fireballs from that jar of pickled habs!!! The left me gasping for breath & it felt like I had swallowed a burning hunk of coal that was festering inside my stomach.

Killer poppers TB..Mmmmmm.

Here's my recent Nacho /w serranos, habs, mushrooms, chicken, tomatos and onions. Layered & Topped with a shredded 4-cheese Mexican blend and mixed THSC Jungle Juice & ElYucateco Aztec Hab sauces. Misc. powders applied too. Under is a bed of refied beans with onions, serranos and garlic w/ chipotle powder. Also topped off with cheese.

I couldn't eat it all and had some the next day..whewww, those funky habs sure permeate everything..was loads hotter the next day as leftovers..

not a meal but made it down to the local asian markets again today & found {in the fine print written in english} "Peanuts Nori Wasabi Flavour Coated"

I don't really know what the hell I'm eating but it tastes like these peanuts are hollow, my sinuses are being vacuumed and ear wax is vacating the premises. And that very green mustardy wasabi flavour mmmmmmm

115 g for $1.59 ....found the video cam & phone cam but only the real still cam will get a decent pic in my hippy cf lit home at night....and i must have filed that somewhere sensible.

will try to get a pic tomorrow....great graphics as always on japanese canned product

Typical asian label! Looks funny. The nuts pictured on the can look sooo tasty! I bought a bag of wasabi nuts at a herbs store in potsdam recently and they were very tasty and hot, too. Not too hot, as they were probably aimed at "normal" people, but everyone who tried them said they were too hot!

Just made a batch of salsa using the hottest mix of powder I have plus a handfull of fresh pods and the salsa turned out ridiculously hot!!! The jars are in the pressure cooker as I am typing this, I think I'll rip one open after the weekend. I also think it'll rip my ring open and make me suffer the day after! Wellllllllllll...... what's an addict to do, huh!?

Stuffed Peppersssssssssssssssss

I FOUND SOME FRESH Ball Chilli's and they are as Huge as i grew last year
so 2 things

1st, a Test, i havent done a fresh chilli in Ages, nor 1 in the new Office.. plus haven't tried 1 yet as mild and not into..
2, straight after i do the test (they should be bout 3-4/10 heat whoo hoo) im gonna get a few Stuff them, then into Oven :)

I know Dave's Insanity sauce doesn't get much love around here...but it's the first extract I've tried that doesn't tear me up inside. And, I actually like the flavor. I use it as steak sauce, lol. Last night I took those $5 filet mignons from Wal-Mart & spread about a teaspoon of Dave's on each side of both steaks. I held my breath, threw them on my Foreman grill, & ran out of the kitchen. Luckily the extrat fumes didn't get too bad in my apt. Cooked the steaks for about 7-8 min. They were soooooooooo good! This was the first time I had put the Dave's on before cooking. Usually I just put it on top of the steaks after cooking.

I put chillis in everything. I dice them into things and then add chilli powder but its pretty mild stuff. Which is why im growing hotter varieties this year

I have Kaitaia Fire (http://www.kaitaiafire.com/index.pasp) hot sauce on everything except breakfast cereal.

KF is about as "hot" as Tabasco, but has a richer flavour.

I've found these "breakfast wraps to go" thingers. Basically, it's like a flat omelet that's wrapped in a tortilla & frozen. Tonight I nuked one for a minute, unwrapped it, put on several slices of habanero & serrano, folded it back up, & nuked it for another minute. I think this is my second favorite snack next to my turkey bacon wrapped habanero poppers!

Nori is the green seaweed, and Wasabi is the horseradish. My guess is its ground up Nori with Wasabi powder - sprinkled on peanuts. YUM!

My eggs this morning were scrambled with a chopped tomato, 2 serrano's and a jalapeno, quarter of an onion, 4 slices of back bacon, half a red bell pepper, some zucchini and topped with aged cheddar and some salsa.

OK lostmind, your eggs sound better than mine, lol. I'm not on a "diet" per se, but I'm trying to watch what I eat & cut calories when I can. The plain ol' eggs & peppers worked just fine for me this morning!

Now, I have a cheese Totinos pizza in the oven with added sliced habaneros & serranos :). I went a little hab & serrano happy @ the store last night!

My 5 minute, hangover noodles el-bogan


Chicken flavoured 2 Minute Noodles with leftover Prawns, Crumbed Fish and Mushrooms, spiced up with some Insanity Salsa, a few fresh Cayennes, some home made sweet chilli and a spoon of sour cream.

I was surprised how good they were and the dry cider was perfect for them

Yesterday I made Calypso Chicken. It's basically a fricasseed chicken dish like Hunters Chicken and many others but done in an Island style.

I had gotten a bunch of fresh peppers of different types so I'm testing them as I go along. I used several Trinidad Perfume peppers as a base when I "seasoned" my chicken. I cut up all the onions and other veggies,add a big doze of black pepper and place everything in a bag with the chicken thighs and let it season for several hours to over night. The Perfume peppers have little heat but did have the aroma I like.

When I cooked the veggies I added a 1/2 to 3/4 of a Congo Trinidad Yellow. The pepper was huge , about the size of a golf ball. Everything turned out great. I would have used a little more of the Congo but didn't want to burn out any of my friends that were here.

Today I'll make Yardie Chicken. It's along the same lines but with different herbs I'll also make Rice 'n' Peas.

I hope everyone eats something great today !

Today I tried my hand at making......wings!

Here are the poor unsuspecting wing parts rubbed with oil & about to go in the oven.

This is the sauce I used. The wing sauce is just some grocery store stuff & some Da Bomb thrown in for heat. I ended up having to open another bottle of wing sauce, too. I took the wings out of the oven every few minutes & coated them with the sauce. I did that 4 times. After the last time I left the wings in the oven for about 10 mins.

Man oh man! I did a pretty good job for my first try! These suckers are HOT! The beer & bleu cheese dressing didn't do much to tackle the heat. I'll definitely be doing this again. As always, sorry for the crappy cell phone pics.

Kangaroo is fine! You don't get it everywhere in Germany. But you can get it in some stores in Berlin where I used to live a few years ago. I liked it but didn't try it too hot in those days.
Ostrich is another great meat you don't fall over here in the country side.

yeah - think we're the only countrty on earth to eat the animals on our national coat of arms.

Its very sweet & gamy (starnge mix) & this is the first time I worked out how to cook it without it going tough.

Will make a great sandwich tomorrow with tomato & asian birdseye

Hey ya'll, I cooked this up the other night and am just getting around to posting the pics..

I sauteed some filets of wild coho salmon in half and half butter and olive oil. Salt and pepper to taste then hit it with cream and sweet thai chile sauce and half a minced orange hab to jack it up just a lil' bit. Here's the evidence...

I made Defcon chicken wontons -- I bought the Perdue pre cooked chicken chopped fine put in sauce pan with defcon 2 (wifey was eating too) to warm. Layed out wontons 1tsp chicken mix and a squirt of Bleu cheese on top ( I poured Blue cheese dressing in a sandwich bag and cut the corner out to squueze it neatly ) wet the edges with water and sealed. Fry for about 5-10 seconds on each side -- These were bangin' seemed like a lot of work but not bad -- no sauce on fingers before going out...

I made some spicy venison steaks (deer meat) tuesday after butchering it with a couple friends:
dry rub: rub both sides, allow to sit for 15mins.
powdered cayenne
powdered habanero (orange)
crushed red pepper
onion powder
garlic powder
meat tenderizer
lemon zest
white pepper
sea salt
cooking:
pre heated cast iron
1/2 red onion, rough chop
3 cloves garlic
1tblsp butter
saute garlic and onion for 5 mins
add venison steaks, 5 mins. per side
it was cut-with-a-fork tender and oh so tasty....

That sounds great! I will refer to this the next time I make deer steaks. I am almost out of them. Good thing deer season is coming soon.

Tonight I made Jambalya with hot smoked sausage, chicken pieces, shrimp, onion, celery, thai peppers, jalapenos, cayennes, and a red hab. YUMMMMM!

Thanks. I'm staying in a "Navy Lodge" actually, it turns out I got tricked..this is just a hotel that either has a contract with the base or is very crafty and knows the ins and outs of military personnel coming in and out of the area. The real Navy Lodge is down the street and is about $20 cheaper! On base is the BOQ which I intend to check out tomorrow, that should be even less, though it won't be as nice not having places that sell food and beer right next door that are open late.

Should only be here for a little bit anyway, so no point in getting too settled in.

Not exactly a meal, but I made a Lemon Drop sauce today. Rather sweet than super hot although I used a load of peppers, but I intended to create something along the lines of Neil's Jungle Juice, something that goes well with ice cream. I am waiting for it to cool down and will try it with some vanilla/choc ice cream tonite!

Sounds great! Heard a lot about those Lemon Drops. They're said to be wonderful with salads or deserts... QED... Sweet and hot always wins.

I'm cooking a pot of pumpkin chili right now. I have added a diced Hokaido pumpkin and use orange habs for heat, a perfect match. Pumpkins are widely available at this time of the year, so it's a nice change. Makes the perfect halloween meal!

Saute'd a pound of shrimp with a little olive oil and fresh garlic. Ate it with my own cocktail sauce while cooking up an evil hab pineapple hot sauce and is it hot! WOW! Hotter than a blond Chinese hooker!

Soaked a pound of pintos overnight, then simmered them until tender.
2 cups of spicy hot V-8
1 chopped onion
12 red and orange habs
oregano
cumin
salt & pepper
cider vinegar
dry mustard
brown sugar
molasses
couple ounces of dark ale.
5 hours in a 250 degree oven.

A friend & I went walking in the park today because it was beautiful out. Lots of people were there, & grills were fired up. I decided to make burgers. I got a pound of ground sirloin & mixed in some Da Bomb & worchestershire sauce. OMG...I got a lil overzealous on adding Da Bomb. My burgers are FIREY...and don't taste that great :(.

Chicken just came out of the oven. I'll shred that and add diced onion, red hatch enchilada sauce, garlic and jack and cheddar cheeses. Wrap the stuffing up in flour tortillas, cover with more sauce and cheese and bake till golden gooey. I'd have a douche of hot sauce or chili's in it but my gal requested it and when the queen speaks.....tsk..tsk..alas..she's not a pepper person.

While I am waiting for the chix to cool, I have some garlic and onions simmering in a sauce pan and will add diced romas, red bell, anahiem, jalapeno, and orange hab peppers, tom paste, cilantro, brown sugar, sea salt and fresh pepper, and pineapple for salsa. I am pretty much addicted to this stuff.

I have a sixer of AK Golden Ale and a sixer of AK Amber chillin' for tonight's boxing viewing and culinary festivities. (Calzahge vs. Jones).

Might post some dirty love pics of the enchi's...

The boys away for the w/end with grand-parents So for me was a couple of whiskeys (black label beam) and a few fried lamb chops with some Stillmanz 7-pot sauce.

Was great all over mouth heat for first minute or 2, then the throat burn, a good natural rough burn with smooth flavour. Just on the verge of being too hot for a good 5 mins after eating.

I made some diced chicken with blair's nitro, a chopped naga, hoi sin sauce, some cream, habanero powder, lethal ingestion.
and some rice to that. might have been one of the best meals I've had!
was just great, first it was kind of sweet then salty and then the heat kicked in, and you could feel the hab taste all way through. was great heat but not too overwhelming, just.. nice!
