This is my first time trying to bottle my own sauce,and I've come across 2 ways to bottle with woozie bottles.The first one says to make your sauce & cook until boiling then place in the sterilized bottles,cap & turn upsidedown for 10 minutes to sterilize the inside of the cap and that's it,no boiling the bottles again.The second way says to process the bottles again after filling them,I did use this method and had a bottle cap come off during boiling (yes they were on tightly).HELP!!! Is the first method really possible,cause if it is it sure seems a lot easier.Any help would be greatly appreciated.

upside down is fine as long as you keep temperature 180/190 for few minutes before bottling

Agreed - more like 15 minutes at 195 though. When bottling make sure the temp stays at 195.

I've got the bottles and caps along with the ph tester. I'm making say 50 bottles for gifts but I think for added safety I want to use the white cardboard inserts for the caps. What kind of cardboard is that or where can I find it?

Damn my fingers are burning...choppin' up the cayennes and habaneros. And I was wearing those yellow playtex gloves even!

Latex gloves aren't worth a damn when it comes to chemical permiability; I don't even bother with latex gloves in the lab. You need nitrile gloves, but they cost more. You get what you pay for...
