Casual fermenter

Casual Fermenter. Have some experience with short fermentation - 2-7 day ferments. I tried a 4 week in a crock and panicked when a floater went fuzzy ;-). I would like to learn to make Hot Sauces to add to my "active" short list. Mainly for self use and maybe some for gifting. By HOT I mean low heat, Cholula or Valentin like.
